Pork for sandwiches

Ingredients

Pork with a layer, neck or any other part on demand I have about 1 kg
Marinade
Soy sauce 100 ml
Adjika dry 2 tsp
Balsamic 1 tsp
Honey 1 tsp
Pepper (freshly ground) taste

Cooking method

  • Marinate the meat for at least 4-5 hours. (I marinate in bags)
  • Remove the meat from the marinade and place it on the lower rack of the vegetable dryer (the dryer is already on), set the temperature to 70 degrees.
  • We keep the meat in the dryer for at least 8 hours, turn it over a couple of times, I put it in the evening and it lies all night.
  • After 8-10 hours, wrap it in foil and in a pressure cooker under pressure for 20-30 minutes in real time, put it directly into the bowl, pour 0.5 tbsp of water on the bottom (so that the pressure builds up).
  • I haven't tried it myself, but eaters really like it.

Note

I make chicken and turkey only in a dryer, without additional cooking in a pressure cooker (it's just that somehow the pork didn't chew well, so I decided to be on the safe side)

But my meat did not turn out pink as in the photo, but the color of boiled pork and there was also a little broth under the foil. Tell me how to make the meat as softly pink as yours? Maybe it should have been kept on drying longer?

Thanks for trying. I won't say about the color of the meat, honestly, it may depend on the meat itself. I often do this in this way, I also did dry salting, the meat is sometimes pinkish, and sometimes, like boiled pork, a little creamy brown. Whatever the broth, it is better to initially make the meat in dry salting, thereby, the excess liquid is drawn out of the meat. These are purely my observations.
So you have to try everything. The meat tastes different, but eaters always like it, unfortunately I won't tell you about the taste. Good luck to you.
