Cake Happy New Year!

Ingredients

Biscuit:
Eggs 6 pcs.
Sugar 300 g
Flour 200 g
Starch 40 g
Candied orange peel 40 g
Soda incomplete tsp
Lemon juice 1 tbsp. l.
Syrup:
Water 0,5 l
Sugar 200 g
Lemon 2 pcs.
Cream:
Eggs 1 PC.
Sugar 100 g
Milk 200 g
Butter 250 g
Mastic:
Sweets 100 g
Lemon juice 2 tbsp. l.
Butter 1 tbsp. l.
For decoration:
Raisins
Nuts
White coconut

Cooking method

  • Biscuit:
  • Separate the whites from the yolks. Beat the whites for about 10 minutes (at the 5th minute add 2 tbsp. L of sugar, continuing to beat). In parallel, grind the yolks with the remaining sugar and vanilla. Transfer 3/4 of the whipped whites to the yolks whipped with sugar, mix gently, adding a mixture of flour, starch, chopped candied orange fruits and soda slaked with lemon juice. Add the remaining 1/4 of the whipped proteins to the dough at the end of the kneading. Put in a round shape (diameter 26 cm). Bake for 25 minutes at 180, then reduce to 160 and bake for another 30 minutes. Cool the sponge cake in a mold, then cut it in half horizontally and coat with syrup.
  • Syrup:
  • Bring the water to a boil, add sugar, dissolve, add lemon zest, stir, boil for 1-2 minutes and immediately strain (so as not to collect bitterness syrup), add juice squeezed from these lemons. Refrigerate.
  • To make a cream: stir the egg with sugar, add milk, stirring occasionally, bring to a boil. Cool (pot in cold water) and strain onto a strainer. Beat butter, adding the cooled brewed mass. Grease the bottom of the biscuit with cream, sprinkle with nuts, raisins, put on the top, coat the sides and top with cream, sprinkle with white coconut and refrigerate. Cut a 26 cm disc from the blue mastic and cover the top of the cake with it. Cut letters out of yellow mastic, numbers in red, and Christmas trees in green and decorate the cake with them.
  • Mastic:
  • Mix white Marshmallows with lemon juice and butter and leave for 1 min. in the microwave, stir, adding powdered sugar. Add food paint (part red, part green, part blue).

I think so too, probably the proteins got lost in the process of writing the recipe.
And the cake itself is very cute
