Air Wheat Muffins

Ingredients

Flour 1 cup (150 g)
Sugar ½ stkn (110 g)
Baking powder 1 tsp (5 g)
Eggs 2 pcs
Butter 50 g
Cream 10% 1 cup (240 g)
Cocoa powder 4 tbsp. l. (45 g)
Airy chocolate wheat 100 g

Cooking method

  • 1. Separate the yolks from the proteins, grind with sugar and softened butter, add cream, baking powder, flour and mix thoroughly. Then gently add whipped proteins into the dough
  • 2. Divide the dough into two equal parts. Add cocoa in half, beat until smooth, then add wheat and mix thoroughly.
  • 3. Grease the forms with vegetable oil, line with special paper muffin cups. Fill them with white dough, filling the forms by 1/4, put the dark dough on top, filling the forms by 3/4.
  • Bake muffins preheated to 180aboutFrom the oven for 15-20 minutes.
  • !!! Use room temperature eggs and butter to make the dough lighter

From the side notes:
- there is clearly a lot of wheat. You need to either reduce its amount, or that part of the dough that will be dark to do more, because it is difficult to mix wheat with dough. It literally barely smears it over.
- I had dark cocoa Dr. Oetker. It can be safely reduced to 3, or even 2 spoons, so that the color is pleasantly chocolate, and not black.

Thanks for the recipe! Delicious! I also liked that the cocoa on top of the muffin turned into icing and looked so tempting that even those individuals who were pathologically obnoxious from baking were tempted :) But next time I will make all the dough with cocoa and wheat - with white dough it is more beautiful, but for us the main thing - tastier :)
