Cottage cheese muffins with raisins and chocolate drops

Ingredients

Wheat flour 200 g
Potato starch 25 g
Creamy margarine 50 g
Eggs 2 pcs
Sugar 85 g
Kefir 100 g
Cottage cheese 150 g
Salt on the tip of a knife
Soda 1/2 tsp
Vanilla sugar 1/2 sachet
Raisins 1/2 stkn
Chocolate or drops 50-80 g

Cooking method

  • This is the dish that my people love very much and are ready to eat at least every day. The preparation is very simple. First you need to take 2 containers. One more, in which we will mix everything (I have a large enamel bowl), another smaller - for flour and starch. The principle is this: flour with starch is added at the very last stage to the mixture of the remaining ingredients. So let's start:
  • 1. In a large bowl I weighed margarine on a scale and put it on a water bath to heat it.
  • Cottage cheese muffins with raisins and chocolate drops
  • 2. After the margarine has melted, remove the bowl from the heat and add 2 eggs. Mix with a fork or spoon. (do not whip)
  • 3. Add sugar. We mix.
  • 4. Next add kefir, cottage cheese, salt, vanilla sugar.
  • 5. Mix all this with a mixer or blender.
  • 6. Pour everything back into a bowl. Add raisins. The raisins were pre-washed and poured with hot water for a short time to steam.
  • 7. Pour flour and starch into the second container, mix.
  • 8. Add soda to our large bowl (you don't need to extinguish with vinegar, kefir and cottage cheese will do it this way). Mix and immediately start pouring flour with starch there (about half). Slightly mix and add chocolate in small pieces or drops. And pour the rest of the flour with starch. Now we mix everything. But here is an important point: Do not try to mix very thoroughly and rub all the lumps. It is necessary to knead until the flour is completely moistened with liquid. This is how it looks in the end:

  • 9. We spray silicone molds with water from a spray bottle or (as I do - I just rinse them with water from the inside). No need to lubricate. Everything will be removed with a bang. These are the forms I have:

  • 10. Lay out the dough in molds, filling them by about 2/3 or 3/4. It is convenient to do this with two tablespoons. Here's what happened:

  • Do not flatten on top, the dough will flow as it should.
  • 11. We put in preheated to 180aboutFrom the oven for about 40 minutes. We take out this:
