Pork Tender

Ingredients

pork (not fatty) 1-1.5 kg
for the marinade:
soy sauce 2-3 tbsp
balsamic vinegar 1 tbsp
sugar 2 h l
mixture of four peppers 1 tbsp
ground coriander 1 tsp
garlic 5-6 teeth
ground smoked paprika 0.5 h l
marjoram 0.5 h l
Cayenne pepper 2-3 pcs
olive oil 100 ml

Cooking method

  • 1. Coarsely grind the pepper, coriander, pass the garlic through a press or grate on a fine grater. Mix in soy sauce, balsamic vinegar, olive oil. Add sugar, all spices and grate the meat with the resulting marinade. Then put it in a container, pour in all the remaining marinade and put it in the refrigerator to marinate for 24-36 hours.
  • 2. Remove the meat from the marinade, put it on foil, rub in the rest of the marinade (or just pour the meat on top) and wrap very tightly.
  • 3. Heat the oven to 200C. Put the meat wrapped in foil on the wire rack. And set a baking sheet with high sides under the wire rack and pour in about a liter (or a little more) of boiling water. In 10-15 minutes after the start of baking, reduce the temperature to 170C and leave the meat to bake for 2 hours, adding water if necessary. Then turn off the oven and leave the meat in it for another 1-1.5 hours. Then remove the meat from the oven (do not remove the foil), allow it to cool completely at room temperature and send it to the refrigerator to "soak" for several hours (or better overnight).

Note

The meat turns out to be the most tender, very aromatic, aromatic. At first glance, cooking seems troublesome. But, believe me, the result is worth it.
