Ingredients

Chicken breast on the bone / fillet 1 piece / 3-4 pieces
Marinade:
soy sauce 3 tbsp. l.
balsamic vinegar 3 tbsp. l.
olive oil 70 ml
ginger 1 tsp
For smoking:
wood chips + some juniper berries

Cooking method

  • I found the marinade recipe on the EdimDom website. I decided to try it.
  • Wash and dry the breast.
  • Mix everything for the marinade in a container and put the breast there. Leave to marinate for a day. Periodically, it is better to turn the breast or at least shake it, there is a vessel with a lid.
  • After a day, remove the breast from the marinade. Wipe off with paper towels. Place on the grill of the smoker.

  • Put chips (I have only alder) and 2-3 juniper berries in a bowl for chips.
  • Pour 80 ml of water (preferably hot) into a bowl.
  • Place the wire rack with the breast in the bowl. Close the lid of the smokehouse, install a pressure regulator.
  • Smoke hot smoked for 25 minutes.
  • Cool the finished breast to room temperature. Then refrigerate for a couple of hours. So it will ripen.

  • Then you can remove the fillets from the bone and chop. And eat it as a cold snack.

Note

The taste is very interesting. And the salt from the soy sauce is felt, and the sourness of balsamic vinegar, and the spice of ginger.
I used powdered ginger and next time I will increase its amount by 1.5-2 times.
This amount of marinade is enough for 3-4 breast fillets.
I recommend using the breast fillet. And it will marinate more evenly, and faster. And the smoking time can be reduced to 20 minutes by 2-3 pieces. fillet, 3-4 - leave unchanged.
