Pickled eggs

Ingredients

eggs 6 pcs
soy sauce 100 ml
balsamic vinegar 50 ml
Brown sugar 1 tbsp
black tea 1-2 tbsp
water 300-350 g
mixture of four peppers 1 tsp
Cayenne pepper taste

Cooking method

  • 1. Boil water and make tea, let it brew and strain. Boil the eggs, cool and peel.
  • 2. Add all the ingredients to the brewed tea and boil everything together for 3-5 minutes, cool slightly.
  • 3. Place the eggs in a jar and pour over the marinade. Allow to cool at room temperature and refrigerate for 24 hours.

Note

Eggs are ready in a day. But you can stand it longer - they will become even more piquant. Eggs can be served as a separate dish and used in various salads. Especially well, in my opinion, they harmonize with tuna and seafood.

Probably, it will turn out prettier from the quail, it will be possible not to cut it. A serving of 6 chicken probably corresponds to 10 quails (I mean matching the volume of the marinade). In the salad, I even feel sorry for such an unusual beauty.

Anna, it seems to me that the quail eggs will have too intense taste and may "dye" inside. They may need to be kept less in the marinade, or balsamic cream may be used instead of balsamic vinegar.
So far I have made only the original version, but why not try and change something?

Yana, I'm glad that the recipe is interesting! The eggs are intensely colored 2-3 mm deep, the rest of the white turns beige. The yolk remains intact. It took two days - they didn't stay longer with me.
