Ingredients

Flour first grade 300g
Buckwheat flour 100g
Serum (water) 300ml
Nuts and seeds (walnuts, hazelnuts, flax and sunflower seeds) total 60g
Linseed oil 1 sec. l
Honey 1 sec. l
Sea salt 1.5 tsp
Dry yeast 1.5 tsp
Egg, half
Semolina for sprinkling

Cooking method

  • Warm the whey slightly, grind the nuts not very finely, put the seeds whole, mix everything except the egg and semolina. I did 15 minutes in HP on dumplings mode. The gingerbread man was very dense and turned with difficulty, I helped him with a spatula, I wanted to add water, but I decided to put half an egg, maybe you won't need it. Let it rest for 1 hour, to my surprise, the bun became soft and sticky. Remove from the stove with greased hands, knead a little, sprinkle the table with semolina and form a bun on it, this will help it not stick to the walls and give a beautiful crust. Place in a baking dish and let it double in size. Bake with steam at 220 degrees for 15 minutes, then remove the water and reduce to 180 and bake until tender. BON APPETIT !!

This bread was inspired by the recipe on the kidney with flour, I just made it a little more interesting.
The bread turned out to be beautiful with a bright nutty taste, it can be eaten just like that, the crumb is slightly moist but elastic, not rubbery, easy to chew. Ate in 2 doses
