Ezo's Bride's Soup

Ingredients

- red lentils half a glass
- bulgur (or large wheat groats) half a glass
- meat or vegetable broth 2 liters
- bulb onions 1 large
- tomato paste 1-2 tbsp. l
- butter 1-2 tbsp. l
- mint (oregano) 0.5 tsp
- ground red pepper - sweet or hot taste
- freshly ground black pepper taste
- salt taste

Cooking method

  • This lentil soup - from Turkish cuisine - is incredibly simple, delicious, hearty and warming!
  • Originally called "Ezo gelin çorbası" - literally translated as "Ezo's Bride's Soup"
  • But if you write together - "Ezogelin", then this word will already be translated as "lentil".
  • Now you can't tell what was the root cause of the name - a component of a soup or a story about a bride.
  • So let's get started!
  • 1. First we cook broth - meat or vegetable. I make meat with a sprig of celery.
  • 2. We wash the lentils and wheat porridge.
  • 3. Finely chop the onion and fry in butter.
  • After that 0.5-1 tsp can be added to the onion. sugar, and fry a little more, but this is purely optional, in the traditional recipe this is not.
  • 4. Dilute tomato paste with broth, stir and pour into onion.
  • Let it boil for a couple of minutes.
  • 5. Fill in lentils and porridge and pour in hot broth.
  • Cook at minimum power until tender - 20-30 minutes.
  • 6. A few minutes before cooking add mint or oregano, black and red pepper, salt.
  • I made a spicy one, with chili, and could not resist - I sprinkled a little baharat.
  • The soup turns out to be thick, and when it cools down it will become very, very thick, so whoever likes it thinner - either more broth or a little less wheat.

From the history:

More than a century ago, a girl named Ezo lived in northern Turkey.
She was famous for her beauty. Yezo's parents, without her consent, married her off to a young man who was in love with another woman.
After a year of marriage without love, the girl returned home.

After several years, Yezo married a second time to a distant relative who lived in Syria.
The girl did not have a relationship with her mother-in-law, and far from her homeland, she really missed her relatives.
And in memory of her mother, Ezo created this soup, which was later called "the bride's soup" or "Ezo chorbashi."

This story became a legend, on the plot of which a film was shot about the cruel and unhappy fate of Yezo.
Each bride prepares this soup on the eve of the wedding so that life is happy and the relationship in marriage is smooth.

I cooked in Scarlett's pressure cooker for 15 minutes under pressure, but I think 11-12 minutes would be enough. I made some changes to the recipe, towards a lazier execution: it was too lazy to fry the onion, so I didn't put it at all, I didn't cook the broth either, I just poured 2 liters of cold water, but added a couple of potatoes and a couple of tablespoons of chopped dried vegetables with mushrooms, Well, since now there is a post, I replaced the butter with vegetable oil.The lentils boiled down not only in mashed potatoes, but there were no traces of them, it turned out to be a very rich broth, similar to a mashed potato soup with whole potatoes. In general, it was only with the purchase of a pressure cooker that I discovered the taste of first courses, and especially soups with red lentils, but I haven’t made lentil soups with tomato yet, and as it turned out in vain, the combination of tastes is excellent.
