Risotto with mushrooms and mascarpone

Ingredients

arborio rice 400 g
chicken or vegetable broth 1 l
onion (large) 1 PC
white wine (CHARDONNAY) 100-150 ml
Champignon 200 g
mascarpone 50 g
olive oil + butter 4 tbsp + 1 tbsp
salt, pepper mix taste
thyme fresh 3-4 branches
chili pepper (fresh) taste

Cooking method

  • 1. Peel the onion, chop finely and fry in a deep saucepan on 2 tablespoons of olive oil until transparent. Put the rice in a saucepan and cook everything together for 2-3 minutes, stirring constantly.
  • 2. Pour in the wine, let it completely absorb. Then pour in 200 ml of hot broth. Then add broth in small portions as it is absorbed.
  • 3. Cut the champignons into plates and fry in a mixture of butter and olive oil over high heat until golden brown. Combine with rice after the rice has absorbed half of the broth.
  • 4. Season the risotto with salt, pepper and mascarpone 2-3 minutes before the end of cooking. Stir until smooth and warm everything together. Serve immediately, sprinkle with thyme leaves, finely chopped chili and drizzle with the remaining olive oil.

Note

We are used to making risotto with parmesan. And I saw this recipe in the magazine "SAVEURS", decided to try it and did not regret it. The risotto turned out to be delicate and velvety in texture, with a very harmonious taste. Try it, I highly recommend it.
