Roe deer meat in red wine

Roe deer meat in red wine

Ingredients

Roe deer thigh 1 PC
Red wine 0.5 l
Salted lard with pepper 100 g
Garlic 1 head
Salt, pepper, paprika, dried basil, allspice peas Taste
Small onion 1 PC
Water 150 ml

Cooking method

  • I had the hind thigh of a roe deer. Rinse the meat. Soak first in water and then in water with lemon juice. Soak for a total of 24 hours. Carefully cut out the thigh bone. Stuff the meat along the grain with long sticks of bacon, peppercorns and garlic. I had dried branches of purple basil and stuffed the meat with whole branches, poking along the fibers. Rub the meat liberally on all sides with sweet paprika and salt. Then give the meat its original thigh shape and tie it with a cook's twine. Pour a little vegetable oil into the bottom of the slow cooker and put onion, cut into thick rings. Put the meat on the onion and pour over the wine. I had red wine Peter Mertes Domkellerstolz. The wine is soft. Add water and turn on "high heat". When it boils, switch to "low heat" and cook for 6 hours, turning the meat periodically.
  • Very tasty and the specific smell of the game is not felt.

I have been looking for a roe deer recipe for a long time. I took something from yours. Soaked the leg of the roe deer in water with red wine, added water so that all the meat was under water, put it on the balcony (very cool) and went to work. In the evening I poured the marinade, washed the thigh, stuffed lard and garlic, top-dry adjika, all this into the sleeve and onto the oven dish. Two hours at a temperature of 160 degrees turned out to be a bit too much, or maybe the meat was not tough, but it still turned out great. Yes, I did not use onions and basil on purpose so as not to discourage the taste of the game.
Babushka, thanks for the recipe.
