Potato focaccia with cheese and baked garlic

Ingredients

Dough:
dry yeast 1.2 tsp
wheat flour 550 g
potato broth 240 ml
Boiled potatoes 200 g
salt 1.2 tsp
granulated sugar 0.5 tbsp. l
olive oil 3 tbsp. l
garlic 2 heads
For the top:
hard cheese 2 tbsp. l
+ olive oil for baking garlic

Cooking method

  • Cut the garlic across the cloves. Make a "boat" out of foil, grease a little with olive oil. Place the garlic, cut up, drizzle with oil and sprinkle with coarse salt.
  • Potato focaccia with cheese and baked garlic
  • Bake in the oven until tender (about 30 minutes) at 180 degrees, cool and pick out the husk.
  • Boil the potatoes until tender in fresh water, drain the water into a cup.
  • Add the required amount of potato broth, salt, sugar, garlic to the potatoes. Purée with an immersion blender or pusher until smooth and cool. Add olive oil to the warm mixture and stir.
  • Mix flour with yeast, add the potato-garlic mixture and knead into a soft, elastic dough. I kneaded the dough in a bread maker on the "dumplings" mode. After the end of the program, I left the dough to rise for two hours.
  • Put the dough immediately on a baking sheet (I put it on a silicone mat, then I baked it on it), greased with olive oil, form a rectangular cake with an area slightly smaller than the baking sheet itself.
  • Grease the cling film with oil and cover the cake, leave to proof for 50-60 minutes.
  • Preheat the oven to 220C (convection 200C) degrees. Sprinkle the focaccia with finely grated hard cheese.
  • Bake until golden brown for about 30 minutes (baking time depends on the oven).
  • Serve hot, tearing it into pieces with your hands, with fresh vegetables, cheese or sausages.

I found the recipe from Vadim: 🔗 a few months ago. Based on a Hell Recipe potato buns with baked garlic, now I got to focaccia.
In his recipe, Vadim recommends sprinkling the focaccia with olive oil, rosemary and coarse sea salt before baking. Since not all my homemade people like rosemary, I cooked with cheese.
