vegetable oil 12 gr.
water 100 g
serum 105 gr.

Cooking method

  • Heat the whey to 35-40 degrees, add the rest of the ingredients and knead the dough. It should be smooth, tight and completely non-sticky. If you knead with your hands, it should take 15-20 minutes. The mixer will handle it in 8-12 minutes.
  • Roll the dough into a ball, transfer to a greased bowl, cover and leave to rise for 1-2 hours at 30-35 ° C. The dough should roughly quadruple. My dough came up in the oven with the light on for an hour.
  • After that, knead the dough, form a loaf, cover and leave to rise for 40-50 minutes. up to an hour or more. I stood for an hour.
  • Cut the spaced loaf and bake in a preheated oven to 200-220 ° C (390-430 F) and steam bake for 23-25 ​​minutes.
  • I preheated the oven to 250 degrees, after I put the bread in the oven, I reduced it to 220, and baked with steam for 15 minutes, then I removed the baking sheet with water, reduced the temperature to 180 degrees and baked for another 25 minutes.
  • This bread is baked today from 1.5 norms of products and with fresh yeast (10 grams).
