Ingredients

Kvass 300 gr
Sourdough 100 gr
Rye flour 250 gr
Honey 12 gr
Pressed yeast 6 gr
Wheat flour 200 gr
Vegetable oil 2 tbsp. l.
Salt 1.5 tsp
Cocoa powder 1 tsp
Instant coffee 1 tsp.

Cooking method

Dough:
Pour kvass into a bucket of a bread machine (I had a homemade one with onion sourdough), crush the yeast, add honey (if the kvass is not sweet), add sourdough (I have onion, according to the consistency of soft dough) and add rye flour.
Enable batching in any mode. Do not wait for the Kolobok, this is a dough. Then turn off the bread maker and let the dough rise (min 40 - 60).
Dough;
Pour sifted wheat flour into the matched brew, pour vegetable oil around the bucket, add salt, cocoa powder and pour in instant coffee diluted in 30 ml of hot water.
In my bread makers there is no "Rye" mode, so I baked on "Basic", the crust is medium, weight - 1000 g
The dish is designed for approximately 900g
Cooking time: 4 - 4:30

Note

I baked in a Mystery 1204 bread maker. Mystery has a short proofing period and does not have a Pause function (as in Rollsen 1160), so the bread is probably a little small, but the roof is convex.
The bread turned out to be soft, fragrant, with a rather thin crust. The smell of coffee and cocoa is not felt at all
