Buns with lemon and icing

Ingredients

Dough:
Water 80g.
Wheat flour (I have 1c) 50g.
Dry yeast (I have a SAF moment) 5d.
Sugar 30g.
Dough:
Opara
Wheat flour (I have 1c) 350g.
Milk 80g.
Sugar 70g.
Sour cream 100g.
Vanillin 1 \ 4h. l.
Melted butter 30g.
Salt 1 \ 4h. l.
Filling:
Zest of 2 lemons
Sugar 100g.
Melted butter * 30g.
Glaze:
Juice of 1/2 lemon
Curd cheese (I have "Almette") 50g.
Powdered sugar 50g.

Cooking method

  • Prepare dough. Heat milk to 37C, add flour mixed with yeast, sugar. mix until smooth. Cover and leave for 30 minutes.
  • For the dough, heat the milk to 37C, pour into the dough. Add all the other ingredients there. Knead a smooth, soft dough for 7 minutes in a food processor at high speed.
  • Put the dough on the table (if necessary, grease your hands with oil), form a ball, grease with vegetable oil, put in a greased container, cover and leave for 30 minutes.
  • Then fold the dough in an envelope and return it back to the container for 40 minutes.
  • For the filling, finely grate the zest, mix with sugar.
  • Roll out the dough into a thin layer (no thicker than 1/2 cm) and cut out the circles (to the size of the cake pan).
  • Grease each circle with melted butter (* I did not grease with butter, because I forgot about it), sprinkle with zest with sugar. Place in a stack of 3-4 circles. Cut in the middle and lay out "standing" in the mold with the cut down.

  • I rolled out the last scraps from the dough, sprinkled it with filling, rolled it up and cut it into pieces. Buns turned out.
  • Cover and leave for 30 minutes.
  • Put the molds in a cold oven, turn on 190C and bake until tender for 20-30 minutes. The exact time depends on your oven. It took me 50 minutes because I was baking on 2 trays.
  • For the glaze, grind cream cheese with powder and lemon juice, pour over warm buns.
