Lean whole-grain pies in a bread maker

Ingredients

Water 300 g
Whole grain wheat flour 350 g
Wheat flour 1 grade 50 g
Wheat flour, premium 50 g
Dry yeast 0.75 tsp
Maltose syrup (sugar) 1 tsp with a slide
Salt 0.75 tsp
Sunflower oil 1 tbsp. l.

Cooking method

  • Stage 1. Making a dough: 300 grams of water + yeast + molasses (sugar) + 150-200 gr. whole grain flour.
  • At this stage, I did not weigh the flour, so the flour figures are offhand, in general - we bring the mixture to the state of rare sour cream. All this was kneaded in a bucket of a bread machine, after which I sent everything to warm up in a bread machine for 2 hours at a temperature of 34 grams. c.
  • Stage 2. I turned on the batch in the bread maker and added it to the resulting foamy mixture vegetable oil + salt + a mixture of all sorts of flour (sifted)... You need to make sure that the dough is not too tight, but also does not stick to the walls.
  • At this stage, the flour mixture of all varieties weighed 350 grams, but definitely 30-40 grams remained, which I then used when rolling and baking.
  • Stage 3. I left the dough for proofing. I took advantage of the programmed mode: (temperature - 34 degrees C.) We warm up for 1 hour -> 30 sec. fall off -> 30 min; warm up -> 30 sec. collapse. WE GET THERE!
  • In the process, do not forget about the filling for our pies. I had crushed potatoes with sautéed onions and stewed cabbage with carrots. Since the dough is unsweetened, the filling is appropriate.
  • Stage 4. We make balls of 50-60 grams. We form cakes from them, put the filling and form our balls-pies. Sprinkle the bucket with flour, put the pies, grease with water, sprinkle with sesame seeds.

  • Stage 5. We send to the bakery. The program is as follows: 30 minutes of proofing at 34 degrees. c. -> 45 min. baking at 150 deg. c. Before the end of baking, greased with sunflower oil.

  • The third did this: I mixed the rest of the dough with the rest of the cabbage + a little flour -> kneaded into a soft but sticky dough -> formed buns and according to the same scheme: in a bucket --- greased with water --- sprinkled with sesame seeds --- 20 min proofing --- 45 min baking.

Note

The dough is completely unsweetened, unsalted. For lovers of "brighter", you can add more salt, but do not forget about the salt in the fillings.

Somehow I didn't think of a very interesting recipe to make pies in HP (I have a gas oven and piece products like pies are not baked very evenly). I understand from this norm that three parties are obtained? And another question, is the dough not so airy and soft on CZ flour as on BC flour?

And I don't have to choose ... from the heating elements I have a multicooker, a kettle and HP, there is also an iron and a hairdryer ... Although I also made pies in a multicooker ... and they also work out well, but the pale ones hurt ...

And the dough, of course, is not that at all! And it is better to eat them lukewarm.The dough will puff up (as you can see in the photo) beautifully, but of course, there is no such consistency in finished form as in wheat ...

But, again, I'm chasing utility ... and next time I will do the same, but also without yeast)

And yes, it turned out three parties, but these are such small ... 4 or 6 pies at a time ...

BUT my husband's friend did not even believe that they were homemade, and when he learned that they were also more useful than the store ones, he was even more surprised)

Yes, my dough was just waiting (it came up in anticipation), I kneaded it again, stuffed it, defrosted it and baked it ...

Although it would be more logical to put the first one, and stuff the rest and let it "swell", and then ONLY bake ...

This day was difficult, because the breaks in the process of proofing and baking were a blessing and I did not think of speeding up the process ...

Before putting them in a mold, I rolled / rolled the pies in a plate with a small amount of vegetable oil.

Although, if everything is with one filling, then you don't have to bother .... lay it out in layers!

CZ pies do not have such lush and voluminous "walls", I'm afraid that they will disperse badly ... I would not recommend in this case ...
