Ingredients

Dough:
Wheat flour 1 grade 100g.
Water 225g.
Sugar 12g.
Dry instant yeast (I have a Saf-moment) 2.5g.
Dough:
Opara
Wheat flour 1 grade 300g.
Milk 60g.
Vegetable oil (I have dark sesame) 8d.
Dark molasses 4d.
Salt 6d.

Cooking method

  • For dough, heat the water to 45C, add flour, sugar, yeast, beat until smooth, cover and leave for 30 minutes.
  • For the dough, heat the milk to 37C, dissolve the molasses in it, add all the other ingredients to the dough.
  • Knead a soft dough, stirring slowly for 12 minutes. Then knead on medium-high speed for 8 minutes.
  • The dough can also be kneaded in HP.
  • Leave the dough in a bowl for 10 minutes, then put it on the table and form a ball.
  • Place the dough in a container greased with oil for fermentation for 1 hour at 28-30C. Next, knead the dough (stretch it into a layer and roll it several times until you get a tight ball). Place again on fermentation for 45 minutes at 28-30C.
  • Divide ripe dough, knead, roll each into a ball, leave for 10 minutes under the plastic wrap.
  • Then roll out the dough into a layer, squeeze out the bubbles with a docker. Roll up into a roll and place with the seam down in a greased dish (1.7 l.) Cover and let proof for 60 minutes at 30C. I leave in the oven with the light on and a mug of boiling water.
  • Sprinkle with water before baking.
  • Bake in an oven preheated to 200C for 15 minutes, then reduce the temperature to 180C and bake until tender for 25 minutes. The exact time depends on your oven.
  • Cool on a wire rack on the side. The bread turns out to be very tender, while I wore it back and forth for a photo, so the sides were all washed out.
