Frangipan tartlets

Ingredients

Dough:
powdered sugar 40 g
almond 20 g
butter 60 g
yolk 0.5 pcs
salt pinch
flour 100 g
Frangipan:
almond 70 g
butter 60 g
powdered sugar 40 g
egg 1 PC
bitter chocolate (70-75%) 90 g

Cooking method

  • Dough:
  • Immerse fresh almonds in boiling water for a few minutes, put them on a sieve, rinse with cold water, peel and put on a paper towel.
  • Put the almonds, icing sugar and salt in a blender bowl. In the "pulse" mode, grind the nuts into small crumbs.
  • Add softened butter, yolk, beat. Add the sifted flour and quickly knead the dough.
  • Wrap the dough in plastic wrap and refrigerate for 1 hour.
  • Frangipan:
  • Melt the chocolate in the microwave or in a water bath, cool to room temperature.
  • Grind the butter with powdered sugar, add the egg, finely crushed almonds, chocolate and stir until smooth.
  • Molds for tartlets (it is better to use silicone or those from which the bottom is removed) grease with butter. Divide the dough into 5 parts, each of which is rolled into a layer 3-4 mm thick (taking into account the diameter of the mold + sides). Place the dough in molds, prick with a fork and refrigerate for 20-30 minutes.
  • Preheat the oven to 190C (convection 170C) degrees. Bake the tartlets for about 8 minutes, remove from the oven and cool slightly.
  • Reduce the temperature in the oven to 170C (convection 150C) degrees. Fill the tartlets with cream and bake for about 25 minutes.
  • Cool the finished tartlets in molds, then carefully remove.
  • Enjoy your tea!

I really liked the almond dough. I make a double portion, use one part, and store the other in the freezer, before cooking I let it warm up on the kitchen table for about half an hour.

I also found this recipe for frangipan from Gordon Ramsay:
100 g ground almonds
100 g icing sugar
100 g butter
20 g wheat flour
2 large eggs
2 tbsp. l. dark rum
Place all ingredients in a food processor bowl and blend quickly to a soft cream consistency.

Frangipan is used as a filling in open pies, fruits are added, most often plum or pear. In order for the frangipan to rise during baking, and after removing the finished products from the oven, it remains as beautiful and does not fall off, you do not need to whip the butter, but just grind it in powdered sugar until a soft consistency is obtained.
