Salmon with mango in a spicy creamy sauce

Ingredients

salmon fillets 500 g
medium mango 1 PC
for the marinade:
lime 1 PC
olive oil 2-3 tbsp
mixture of four peppers (ground) 1 tsp
salt, sugar taste
for the sauce:
cream 33% fat 250 ml
milk 70-100 ml
fresh parsley 2 tbsp
chili peppers (fresh) 0.5 pcs
salt taste
olive oil and butter for frying

Cooking method

  • 1. For the lime marinade, remove the zest and squeeze out the juice. Add pepper, salt, sugar and olive oil and mix until smooth.
  • 2. Cut the salmon fillet (skinless) into pieces with a side of 4-5 cm, pour over the marinade and leave for 15-20 minutes.
  • 3. Cut the mango into small cubes and fry in a well-heated frying pan in a mixture of olive and butter - this takes about five minutes. Remove from heat and set aside for a while.
  • 3. Remove the pieces of salmon from the marinade, remove excess moisture and fry in a well-heated frying pan until moderately crusty (3-5 minutes) and set aside.
  • 4. Pour milk and cream into a saucepan and let it boil. Add parsley, fresh chili (finely chop beforehand) and pour in the rest of the marinade. Let it boil until thick and put the fish and mango in the sauce. Heat everything together and serve immediately.

Note

The fish is juicy, tender, literally melts in your mouth. The sauce is aromatic, sweet and sour, moderately spicy. The dish is very satisfying and, in my opinion, absolutely self-sufficient.
