Fast acting dry yeast 2 tsp
Medium ground sea salt 1.5 tsp
Granulated sugar 1.5 tbsp. l
Butter (used natural ghee) 30 g
Kefir 3.2% fat 150 g
Powdered milk 1 tbsp. l
Warm water 190 ml

Cooking method

  • According to the instructions for the Panasonic SD-2501 bread maker - a spatula for wheat bread - put yeast in a bucket on the bottom (Dr. Otcher was used), weighed and sifted flour into the bucket, milk powder there; dilute salt and sugar in warm water (30-35 degrees), mix with kefir from the refrigerator (if you get it warm in advance, you don't need to heat the water), add to the dry ingredients. Crumble the butter on top. Program "05" for quick dietary bread. The crust color and size of the loaf are not set in this program. I also tried to cook on the program "04" (Diet bread "), but then you need to use ordinary baker's yeast - not fast-acting - and reduce their amount to 1.5 tsp, you can not add milk powder (there will be drier bread and a larger picture ), or completely replace the water with whole milk - this way a more pronounced "creamy milk" taste is obtained

I bought a bread maker a month ago just to bake "healthy" types of bread. You can now buy whole-grain flour "French Shtuchka" in Moscow stores - I tried to bake it according to all the published recipes, everything worked out, but I did not like the fresh, dull taste of bread. I found in the refrigerator a package of "middle-aged" kefir - 5 days for him - and decided to use it in making bread. I took a recipe from the instructions for bread on yogurt as a basis, the result was very successful! I spy on the kolobok, but I don't interfere. The bread is high, with a uniform, dense, fine-pored crumb, very slightly moist and viscous, with an amazing taste and smell, after complete cooling, it is very well and thinly sliced ​​for sandwiches. In taste and smell, sour-milk notes are discernible ... This homemade bread was dubbed "Morning", because sandwiches are very tasty with it.

I think the author of the recipe made an inaccuracy in counting the ingredients, which can be seen in the recipe and looking at the photo of the bread.
The amount of liquid and yeast is clearly overestimated, which can lead to a fallen roof - however, this is not visible from the photo, on the contrary, the crumb of the bread is too steep.

But I tried it from whole-ground wheat "Garnets" - I really had to add 2 tbsp. l. (30 g approximately) wheat flour, otherwise the bun was very sticky ... And the bread turned out to be not so lush, flat ...

This is my second bread. In terms of ingredients, I replaced water with 150 ml of sour milk, sugar with honey, whole grain flour - also a French thing, usual - Makfa. I sifted everything, put it in the “flour in water” method and sleep. And in the morning - the smell for the whole house. A bread machine is a thing!
