Soup kharcho

Ingredients

beef (pulp) 400-500 g
onion (large) 1 PC
chili peppers (fresh) 1 PC
zucchini (medium) 1 PC
walnuts, rice 50 g each
sauce 2 tbsp
hops-suneli 0.5 h l
sumac 0.5 box l
turmeric, saffron 0.5 h l
ground coriander 0.5 box l
cinnamon, nutmeg on the tip of the knife
ground chili pepper, salt, sugar taste
parsley (cilantro) 1 bundle
garlic 3-4 cloves
olive oil for frying
water 2-2.5 L

Cooking method

  • 1. Cut the onion into thin half rings and fry until light golden. Cut the meat into 4-5 cm pieces, add to the onion and fry over medium heat for 10-15 minutes, then transfer to a saucepan with boiling water.
  • 2. Zucchini and chili peppers, peeled, cut into very small cubes (about 5 mm side). Fry everything together in a pan for about five minutes and add to the meat in the pan.
  • 3. Chop the nuts not very finely, add to the saucepan to the rest of the ingredients, add the rice and bring the soup until tender. 5-7 minutes before the end of cooking, add sauce and spices to the soup, adjust the pungency and sourness to taste.
  • 4. Finely chop the garlic and parsley or cilantro and add at the very last moment. Let the soup steep for 30-40 minutes and serve.

Note

The soup turns out to be very satisfying, rich and incredibly aromatic.
