Both models are good. the difference is this:
1. The body of the 253 model is metal, the 255-plastic
2. In the 253rd model there is an Italian bread program, which in the 255th is replaced by a dough dumplings program. That's the whole difference. In the 253rd, you can also make dough for dumplings on the pizza program, just interrupt it after kneading, because the dough does not need to rise.
In general, you are lucky that you saw the 253rd model, they are no longer imported, which is a pity.

There (in contrast to 254) there is "Rye" bread and a dispenser, there are no "Dumplings" (as in 255), for that is, "Italian bread" (which is not in 254, not in 255). You can also knead the dough on dumplings on "Pizza". Check the presence of all the elements (remember about the two knives for regular baking and for rye) and if everything is in order, BUY without hesitation. After 255 I bought myself a second stove - 253 and am very satisfied.

The blades at 253, 254 and 255 are the same. Even if there is no rye spatula in the kit, if you really want it, you can order it at the service. It will take a long time, but they are not expensive (in February I ordered two usual ones for the 255th - they cost 340 rubles each).

Even if you take 254, you will not lose much, since many do not use the Rye Bread program because they do not really like the result. It is much more interesting to get bread if you just knead it on the "Pizza" program, turn it off, let it come up for 1-1.5 hours and bake for 55-60 minutes. Some people come up with more complicated combinations. And for unwillingness to bother, you can bake on the "Basic" program or on the "Diet" - "Diet Fast". With experience, adjust and choose the program that suits you the most.

I have Moulinex 3000. At first, due to the lack of dry yeast, I experimented with live ones. Our instructions say to take dry to live as 1: 5. It's a lot. Try 1: 3. I let them rise a little (water / milk + sugar + finely crushed yeast) The bread rose VERY strongly. But each time is different. Therefore, I found dry yeast in a neighboring country, which suited me completely. Yet foreign stoves are suitable for dry yeast.

Today I set up an experiment with live yeast.
For 700 grams of flour, I took 18 grams of yeast.
He baked Borodinsky using the technology that I gave in the relevant topic.
I started a sourdough with live yeast (3 tablespoons of rye flour, 4 tablespoons of water and a pinch of sugar)
Simultaneously brewed 3 tbsp. spoons of malt.
After a couple of hours, I kneaded the dough in the "Pelmeni" mode, and after kneading, I switched on the "Basic" mode.

Yes, yeast is too much - rye pearl dough.
The loaf rose, baked well, but Sad ...
the top sat down and became flat from convex. Outwardly, the bread is tall, but without a convex top it looks ugly, although I sprinkled it with caraway seeds.

It is clear that too much yeast.
But ... the taste .. The best bread from Borodino, which I baked. There is absolutely no yeast taste, but the aroma is the most "Borodinsky".
So I decided next time to reduce the amount of yeast by a third, but the Borodino oven only uses pressed yeast, not dry yeast.
