Lohikeito - Finnish fish soup

Ingredients

Salmon 1 kg
Potatoes 3 pcs.
Carrot 1 PC.
Celery root 1 PC.
Cream 20% 200gr.
Butter 50g.
Greens
Salt pepper taste
Onion 1 PC.

Cooking method

  • I took the tail of the salmon. I separated the fillet, and cooked broth from the bones and onions (I usually boil the onion and throw it away). Added potatoes, carrots, celery. When the vegetables are ready, I add salt and pepper and add pieces of fish fillet. She brought it to a boil, poured in the cream, and tossed in a lump of butter. Brought to a boil again and turned off. All! The soup is delicious, both adults and children like it. With spices, I put salt, pepper and lavrushka so that they do not clog the taste of the fish soup, but only emphasize it.

Tell me when you cooked the broth (quote: I separated the fillet, and cooked the broth from the bones and onions (I usually boil the onion and throw it away). I added potatoes, carrots, celery. July, Sveta, the soup is interesting - I haven't cooked the fish with celery yet.
I tried it with lovage and shrimp, fish hodgepodge too, but Finnish fish soup is not yet available.
Thank you, I'm taking it to the bins.

We both grandmother and mother cooked a similar soup, they only called it the Tsar's Ear ...,
like Petrusha still loved this... Now I cook in the same way ...
Since we always take the fish (salmon, salmon, trout) whole, then we cook the fish soup from the head and tail to the fin, while the fins themselves go there too ... the broth turns out to be awesome! ... We take out the fish, cool and disassemble the meat into small pieces. Strain the broth, then boil potatoes in it and more, onions, vegetables, whoever likes (I don't put carrots) ... When ready, salt and chop with an immersion blender in mashed potatoes. After that add cream and cheese (like creamy viola). While stirring, bring to a boil, put the fish back and turn it off. All! The ear is ready! Already add greens and crackers to the plate. The ear turns out to be true - royal! And the roots of this fish soup are undoubtedly Finnish or Norwegian ...

Repeated, really wonderful recipe! Thank you!

It really should be a delicious soup. Only 40 years ago, the Finns themselves showed me the preparation of the Finnish fish milk soup. Only a couple of tablespoons of cream are added there at the very end.And everything is cooked in milk, the base and filling is lettuce.
