Custard cakes with chocolate orange cream

Ingredients

For the test:
milk 100 ml
water 100 ml
flour 75 g
butter 50 g
eggs 2 pcs
salt pinch
For the cream:
milk 200 ml
orange juice (freshly squeezed) 50 ml
orange liqueur (optional) 1 tbsp
orange peel 1 tsp
sugar 3 tbsp
corn starch 2 tbsp
egg yolks 2 pcs
dark chocolate (72%) 100 g
cream 33% fat 100 ml
cocoa and powdered sugar for sprinkling

Cooking method

  • 1. For the dough, combine milk, water, butter, salt cut into small pieces in a saucepan and bring to a boil. Add all the flour at once, reduce heat and mix thoroughly. Heat everything together (stir continuously) until the dough begins to lag behind the sides of the saucepan and gathers into a smooth lump. If during mixing it was not possible to avoid the formation of lumps, then this is easy to fix with a hand blender.
  • 2. Remove dough from heat and add eggs one at a time. The finished dough should be firm, elastic and silky.
  • 3. Line a baking sheet with baking paper, transfer the dough into a pastry bag and place the cakes at a considerable distance from each other, since they greatly increase in volume during baking. Bake at 180C for 20-25 minutes (until golden brown).
  • Cool at room temperature.
  • 4. For the cream, grind the yolks with sugar, then add starch and zest to them. Melt the chocolate in a water bath.
  • 5. Strain the orange juice and boil. Combine with milk and bring everything together to a boil. Combine with the yolk mass and boil everything together, stirring continuously over low heat for 5-10 minutes. The cream base should thicken well. Add chocolate and liquor to the finished base and cool completely.
  • 6. Beat the cream and in several stages, without stopping whipping, combine with the chocolate base. Using a piping bag with attachment, fill the cakes with the cream and sprinkle with the cocoa mixed with the powdered sugar.
