Cooking method

  • We put the above components into a mold, Yeast to choose from - SAF moment in the dispenser or crumble fresh into milk at the beginning of 1 batch. We use whatever mustard we like (I use Dijon) Next, turn on the mode 01 / size M / medium crust and we are waiting. Knowing about the peculiarities of flour from different regions, for the first time I advise you to "trace" the bun and adjust the amount of flour. After the last "mixing" (1.40 min.) With a hand oiled rast. I carefully "center" the bun in the form with oil, so the dome is more beautiful. But you don't have to touch who you like. Thank you.

Tell me, the loaf in the store is sweet mustard, so the mustard must also be sweet?
At home, my husband has a capital, so she "pluck out your eyes", she is unlikely to fit.
And the bread is very beautiful and very tasty, I also want to try to bake this.
Thanks for the recipe.

yes the bread is slightly sweet, I put Dijon fresh and it is very fragrant. When it baked the smell was strong, but then when the smell cooled down, I was afraid that mustard would be heard in the bread, but no, the mustard gave a spicy aroma. but not bitterness. When vigorous mustard you can probably try a smaller one. My friend threw it with whole grains, they like this mustard, they like grains in the dough. I don't really like mustard, I use it to make homemade mayonnaise and marinade for meat. But the bread is very aromatic.
murka
Thank you! I will definitely bake it as soon as we finish the milk.

Baked last week, very tasty, all the homemade breads were praised.

Yesterday I decided to conduct an experiment. I added all sorts of usefulness and goodies to the bread.
Saf-moment yeast 1.5 tsp
Flour 425 gr
Wheat bran 25 gr
Salt 1 tsp l
Sugar 2h. l
Mustard 2 tsp
Plum oil 20 gr.
Mustard oil 2 tbsp l
Milk 320 gr

Mode 03 (bread with raisins)

I roasted sunflower seeds, pumpkin seeds, flax seeds and sesame seeds until light yellow, all in a tablespoon. And added everything on a beep.

She straightened the bun and went to bed. At night I remembered about the stove, the dream vanished like a hand. And she just turned off 5 minutes ago. This is the flair !!!

What a beauty, she took a sandwich to work, ate it with pleasure.

Elena, thank you very much for the idea. I feel that we will not change the recipe for a long time.

Elena 65
I'm glad you liked it, bake for health and change to your liking. After all, we are all so different and therefore the bread is different for everyone. I also constantly "adjust" new recipes for myself. And very interesting bread is obtained. I think that the additives only enriched the taste of the bread. It is necessary to try the additives somehow.

The cooking time in mode 01 in your HP is 4 hours, not 3.30, maybe you baked in mode 07?

The time that the stove displays on the electronic board when the START button is pressed 4.00-4.05 depending on the size (L-4.05 min.) Then everything is according to the table, leveling 30 minutes, two kneading, two mixing, raising and baking 50 minutes ... But since users of other bread makers are confused by this time, I write the time without leveling 3.30 minutes.

Panasonic SD-2502. Mustard bread- baked bread according to this recipe, so beautiful and fragrant it is cooling down, just put 1 tsp. with a slide of dry mustard, it turned out to be 700 g, baked the main bread on program 1, I have it 2.50 minutes.

Elena 65, thanks for the recipe!
thanks for the good review. The photo shows a very beautiful bread. Golden.

Another thanks from me! The bread is very tasty, slightly spicy, thin crust and airy, but slightly rich crumb. Of the changes - sunflower oil instead of mustard oil and 1 egg (reduced the amount of milk) Yes, and a tablespoon of powdered milk reduced the flour a little.
Khlebushek was waiting for me from work. The scent stood! For the entire entrance)
Without a photo - it is impossible to cut a completely cooled bread, you always have to cut a little warm, the crumb, of course, is crushed (I hope someday there will be enough exposure - then I will take a picture, since I will bake this bread more than once!
Elena 65
Eat to your health. After all, I also created my favorite recipes based on the basic recipe. Therefore, you must definitely try several options and choose your favorite. Now I no longer experiment - I have achieved a balance of all tastes. If you like "black" try the option https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=219607.0 I only advise you to remove the kneading spatula for the first time - this will remove the admixture. : oops: Then do as you want and compare. Good luck.
Elena Pavlovna
In general, thanks!
But:
I didn’t see the difference between your bread and this one: https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=2900.0
In favor of your recipe, I will say about a more correct (only my opinion) flour-water ratio.
I baked 300 ml with milk, I had to add a lot of flour.

About the bread itself.
Delicious!
I would proudly post a photo, but no photo. excuse me. We'll have to take our word for it, which turned out to be delicious and very beautiful - the shape, color, lid of bread, in general, everything is like real bakers

And, I forgot a little more. I switched to live (pressed) yeast, the result, as promised by the members of the forum, is completely different !!!
Elena 65
I never claimed the originality of this recipe, I found it in the vastness of the Internet, I did not know about the presence of this recipe (the earlier version), therefore I posted it. If for you I can basically delete it. I still don't use live yeast, because apart from the advantages you are writing about, this option has disadvantages for me, there is no stable result.
Elena Pavlovna
Oops, I think I offended. Sorry for god's sake.
I just came across these two recipes side by side, so I noticed. In general, you are right, this is absolutely none of my business. The moderator brings order to the forum.

And what does it mean - there is no stable result?
Elena 65
By purchasing a pack of 100g. for example, from one manufacturer (like the best one for my taste), in the nearest supermarket I can make the first best loaf of fresh yeast (the supermarket does not bring in a new batch until it sells the whole batch), so when buying the next package I buy yeast with a smell (the peculiarity of live cultures is they begin to die, and a sour smell appears from them) This yeast rises already for a worse smell in bread. I tried to buy in different outlets, looked for fresh ones by date. But again, there are "failed" parties, with such leaps and bounds bread goes to pigeons. Having pushed around passed to dry. I buy only SAF France, Gold is suitable for both sweet pastries and dough with a low sugar and rye content. From the beginning of unpacking the pack until its end, the quality is constant. There is no smell of yeast. You can see a section of bread in my recipes, all at "5".All of them are on the SAF. My pack takes 6-7 months. On fresh yeast, I liked only rye, it wins over bread at the SAF, but I was tortured to constantly look for fresh ones, and the market is far from home. After reading the information on the Internet, I realized that we are driving SAF only for supplements. And with a calm heart I use the SAF.

I have a stove from another manufacturer, advise what weight of a loaf to set 500g, 750g or 1kg. And can you replace mustard oil with something?
Elena 65
I think that 750 gr. will do. Flour plus ingredients. In general, I have never weighed the finished bread. Our program only has a maximum size of 5 minutes. Most likely, the kneading is lengthened, since there is more flour and it is necessary to knead better, I think so.

A larger loaf will probably take longer to bake. I diminish the oven for 5 minutes more it will be. And there who knows.
Can you use olive or sunflower oil instead of mustard oil?
Elena 65
This bread is called mustard bread for its flavor. The oil also gives this flavor. I baked it with mustard. For example, if I bake chabata, then I add olive oil, the oil participates in creating an original taste - I tried chabatu on sunflower, loses in originality.
Badya
Hello, what if there is no mustard oil? What can replace it?
Admin

Any other oil.
Badya
And yet, I bought the mustard powder, how can I replace it now?
Admin

According to the recipe, the mustard is ready-made, it has a delicious composition, rich.
Powdered mustard will not give such a bright taste. Although there were reviews that the powder is also being laid.
Try it yourself

I always put 0.5 tsp in mustard bread. mustard powder and 3 tsp. (Regular, not measured) ready-made mustard beans. And sunflower or butter oil. Excellent bread turns out.

I bake the "French bread" mode. It turns out a little more ruddy. than we would like, but very pleasant to the taste and "nostril".
Elena 65
A very interesting loaf shape. I love just such. High, of course, spectacular, but it is more convenient to cut and eat such. And the crust for me is the same. And not pale and not fried. exactly golden. In short, it turned out very appetizing. Good luck.

Thanks for the recipe! I baked this bread today. The bread is baked well, there is no need to keep it on the heating for 15 minutes after baking. The taste of the bread really looks like a mustard loaf, a little sweet, a little spicy (almost no mustard is felt), with a light rich taste. The bread is very soft. The crust is thin, the spatula came out of the bread easily. The pulp is airy, porous, I would say - openwork, slightly springy. It is cut very well.

But with the balance of flour - the liquid muddled. Observing the principle "Flour in water" did not immediately put all the flour, left a couple of spoons. The dough seemed thin. In a hurry ... I added all the flour to the end and about a tablespoon of flour above the norm. It turned out in vain! When kneading, the bun seemed taut. Well, what can I do, milk splashed ... The bread, of course, was fashioned, but the roof slightly sagged from such a rude interference. Although, maybe the yeast is fast, next time I'll put a little less.

And I will definitely try with seeds. I think it will be delicious.

Do I understand correctly, the bun should be classic wheat?

I have a Redmond 1910 stove.

It is almost identical to 1909 and 1919

Thank you Thalia for the compliment. You are quite condescending to me :-))

During the first year I was working on the technology, getting to know the "correct" kolobok, constantly filling up and refilling. Now I put the bread on the machine. flour producer selected. And already intuitively knowing the flour and knowing what consistency the gingerbread man needs, I pour the liquid. From additives - grated lenses. sunflower seeds, pumpkin-toasted. Milk thistle powder. Sesame-toasted. I put the bread for the night at 7 am readiness. I save electricity. When I fall asleep the workpiece, I add additives from my mood. But if you plan to have a feast of different types of salads, I don't add additives (excluding flax seed). I love that the bread was neutral. The taste of the salad comes to the fore. And every time I cut homemade bread, I think with gratitude about the day when I decided to buy a bread maker. The main plus of this decision, which I would put in first place now after several years of eating homemade bread, is HEALTH. Precisely health. Great taste, rich variety of varieties, the ease with which you achieve remarkable results. All this is wonderful. And these factors also play a role. Heartburn, Heaviness, Belching are gone in my family. They left with the purchased loaf. They left and never came back. And every year we began to eat less bread. Purchased bread is "empty". There is no nutritional value in it. So a person chews sandwiches with sausage trying to saturate the body. And he gets only gastrointestinal problems. These are the guys. Good luck to all novice bakers. Do not give up. The smell of fresh bread is the smell of home. Family scent. The smell of health.

She baked mustard bread with wheat bran and flax, sesame, sunflower and pumpkin seeds. True, very tasty :-) Thank you, we repeat it many times!

Yes, here's another thing ... I slightly reduced the yeast, put 1.25 tsp. The roof is in place :-)

However, she did not photograph the whole loaf. I thought that I would do it in the morning, the lighting is better, but my husband diminished half of the loaf at night ... In response to my dumb question in my eyes, I heard only grumble, "It's a pity ..."

I baked this bread, looked at the recipe for a long time and wanted to try it! It came out just super! I made corrections due to the presence / absence of ingredients, and such a beautiful, baked bread came out. I replaced sugar with honey, put the usual mustard + 1 tbsp. l. mustard powder, I didn't have butter, I replaced mustard oil with olive oil. Baked on the "Whole Grain" program 3.40 minutes. Came out weighing 765g. The first time it turned out with such a dome under the cover! Delicious, crispy crust! Thank you, Elena 65, per recipe!
