milk 50 ml
butter 35 g

1 tbsp. l milk + 1.5 tbsp. l sesame

Cooking method

  • Dough:
  • Put all the ingredients necessary for the dough into a bucket of the bread machine (the milk should be warm), select the "Pelmeni" or "Pizza" mode, after 10 minutes stop the kneading and leave the dough alone for 1 hour.
  • Dough:
  • Add all the other ingredients to the dough. Egg, milk, butter and sour cream - at room temperature. Add 320g of flour to the dough immediately, the rest - we look at the batch (depending on the moisture content of the flour used, I did not add). The dough turns out to be soft, very tender, it is not smeared along the bottom of the bucket under the mixer. Mode - "Basic", size - L (medium), crust - light or medium.
  • Gently grease the bread with warm milk and sprinkle with sesame 10 minutes before baking.
  • Put the finished bread carefully on the wire rack and let it cool completely, without covering.

Everything was as described by you. The dough is softer than usual, but not smeared. I weighed everything for sure. Usually I put 1.5 tsp for 600 g of flour. dry yeast, but I put it immediately on the program for 3h 20min, and here the flour-yeast ratio is about the same, but + an hour for dough, so I decided that the dough was fermented.
