Butcher's butter

Ingredients

Dough:
flour 90 g
water 75 g
fresh yeast 6 g
Dough:

flour 250 g
water 50 ml
eggs 1 pc + 1 yolk
sugar 40 g
light molasses (honey) 1 tbsp
salt 1 tsp
butter 35 g
sesame or poppy seeds for sprinkling

Cooking method

  • 1. For dough, dissolve the yeast in warm water, mix with flour and leave for 20-30 minutes.
  • 2. Grind the egg and yolk with sugar and molasses or honey and mix with the remaining water. Combine flour with salt. Pour the egg mixture into the matched dough and beat until smooth. Then add flour in several stages and knead the dough for 6-8 minutes. Add softened (not melted) butter and knead for another 3-4 minutes until smooth. Leave to rise for 60-75 minutes (up to approximately 2.5 times increase).
  • 3. Put the finished dough on a flour-dusted cutting mat and form a rope 60-70 cm long. Zigzag three loops, wrap the remaining end of the rope end up and fix the beginning of the "snake". It is better to form a whisker immediately on a sheet covered with baking paper, on which it will be deformed. Leave for proofing for 45-60 minutes, covering with a slightly damp cloth.
  • 4. Bake in an oven preheated to 200C for the first five minutes, then lower the temperature to 180C and bring to readiness (another 15-20 minutes). Cool on a wire rack. Before baking, brush with an egg mixed with milk and sprinkle with sesame seeds (I used black) or poppy seeds.
