Kasule

Ingredients

lamb (loin) 300 g
pork pulp (not greasy) 300 g
veal ribs 300 g
chicken (legs, wings) 300 g
homemade sausages 300 g
melted goose fat for frying 50-70 g
onion (large) 2 pcs
carrots (medium) 2 pcs
garlic 3-4 cloves
red lentils 100 g
beans 250 g
fresh tomato 2-3 pcs
mixture of four peppers 1 tsp
juniper berries (dry) 5-6 pcs
marjoram, thyme, 1 tsp each
rosemary 0.5 box l
salt, sugar taste
dry white wine 200-250 ml

Cooking method

  • 1. Soak beans, rinse and boil until half cooked.
  • 2. Cut the meat into portions and fry over high heat until golden brown.
  • 3. Cut the onion into half rings, grate the carrots on a coarse grater and lightly fry in a pan.
  • 4. Grease the bottom of a baking dish with goose fat, add half the fried onions and carrots and half the garlic. Then add half of the meat, add half of the lentils and half the beans. Sprinkle with half the spices. Then place the remaining ingredients in the same order.
  • 5. Pour boiling water over the tomatoes, remove the skin and cut into large wedges. Fry lightly in the remaining fat, add a pinch of sugar and pour in the wine. Let it boil and then pour into a baking dish. Cover with a lid, put in an oven preheated to 160C and simmer for 1.5-2 hours. Add a little wine or water if necessary.

Note

Every Kasule is French, the hostess cooks her own way, each has her own secrets. In my family, this dish has taken root in this version. I decided to share it with you.
