Zucchini jam with dried apricots and lemon

Ingredients

Zucchini 1.5KG
Sugar
(I took 750 g)
1.5KG
Dried apricots 250 g
Half lemon

Cooking method

  • Wash the courgettes, dry, peel and chop coarsely. Put dried apricots on a sieve and scald with boiling water. Zucchini and dried apricots mince or grind with a blender. Put the resulting mass in a saucepan, add granulated sugar, bring to a boil and cook over low heat for 30 minutes, stirring occasionally. Scald the lemon, dry it and remove a thin layer of zest with a grater. Squeeze juice from the lemon pulp. Add lemon juice and zest to the zucchini and cook for another 15 minutes.

Note

The taste of confiture is very similar to apricot jam, apparently the presence of dried apricots affects. I cooked in a confiture, although I used to always cook it in a saucepan. Delicious confiture turned out!
