Ingredients

pork 1.5-2 kg
for the marinade:
soy sauce 50 ml
balsamic vinegar 2 tbsp
dark mountain honey 2 tbsp
fresh ginger root (grated) 2 h l
star anise 2 pcs
cardamom 0.5 box l
cloves (ground) on the tip of a knife
ground coriander 0.5 h l
cinnamon (ground 0.5 box l
black, Sichuan and pink peppercorns (grind) 1 tsp
garlic 5-6 teeth
olive oil 50 ml
dry white wine 200-250 ml + 1-2 tbsp

Cooking method

  • 1. Mix all the ingredients for the marinade and rub the meat on all sides. Put in the refrigerator to marinate for 24 hours.
  • 2. Place the wire shelf in a deep baking dish and place the meat on it. Pour wine onto the bottom, cover with a lid and put in an oven preheated to 160C for 60-90 minutes, periodically pouring the resulting juice. Then turn off the oven and leave the meat in it for about an hour, do not remove the lid from the head start.

Note

It turns out tender, aromatic meat. It is very tasty both hot and cold.

Therefore, slightly tilting the rooster, watering is convenient. But in this case, I water just for a beautiful and rich color of the crust, you can do without it.
