Ingredients

Wheat sourdough (100%) at its peak 200 g
Water 220 g
Fresh onions (quarter medium head) 15 g
Carrots (half) 45 g
Potatoes (2 medium) 170 g
Wheat flour, premium 310 g
Wheat flour c / z 30 g
Vegetable oil (I have olive) 2 tbsp. l.
Salt 1 tsp
ADDITIONAL:
Water 80 g
Wheat flour, premium 140 gr.

Cooking method

  • Stage 1. Leaven. I put the starter culture in a bucket of HP and poured it with 140 g of water, mixed it and left it to rest ... in the meantime:
  • Stage 2. Vegetable puree. I cut the vegetables (in the picture half an onion, I still cut it in half) into cubes and put them in the blender's chopper.

  • The liquid was not drained from the vegetables.
  • Stage 3. Kneading the dough. In a bucket of KhP with diluted sourdough, I put vegetable puree, premium wheat flour 130 grams and c / c 30 grams, vegetable oil, salt, and turned on the mixer in the "Pizza" mode, and gradually added 8 tablespoons of flour in / s, it's about 180 grams approximately, which is in the ingredients and put together.
  • Stage 4. Proofing. I was going to leave the dough for an hour for proofing at 32 degrees in HP, but I was forced to leave the house, therefore after 40 minutes of proofing (by this time, very little "swelled"), I added another 80 grams of water and 6 tablespoons of premium flour ... She returned after 2.5 hours - the dough increased 2.5-3 times.
  • Stage 5. Cooking. I immediately went to fry everything, the dough was very thick and viscous, but somehow I coped with it. She laid out the tortillas in a layer of about 2 cm and fried until a beautiful color.

Note

I do not know whether the first hour of proofing would be enough or not, but I would still recommend to endure at least two hours and then everything will surely work out!

The pancakes are delicious, with sourness, everything is like a grandmother's in childhood!
