Snack tomato pancakes Penechki

Ingredients

Dough:
Eggs 2 pcs
Tomato juice 1 glass
Milk 1 glass
Flour 1 glass
Salt 1/4 tsp
Sugar 1 tsp
Vegetable oil 1 tbsp. l.
Filling:
Boiled egg 1 PC
Hard cheese 150g
Cod liver 1 can (230g)

Cooking method

  • For the dough: 2 eggs, 1 glass of tomato juice, 1 glass of milk, 1 glass of flour, 1/4 tsp. salt, 1 tsp. sugar, 1 tbsp. l. vegetable oil.
  • For the filling: 1 boiled egg, 150g. hard cheese, 1 can (230g) cod liver.
  • Break eggs into a bowl, add salt, sugar, beat. Pour in tomato juice, add flour and beat until the lumps are dissolved. Then pour in warm milk, add vegetable oil and mix well.
  • Fry pancakes on both sides.

  • Mash the cod liver together with the oil (I drained half) with a fork, add cheese and eggs grated on a fine grater, mix. Put the filling in the refrigerator for 30 minutes.

  • For pancakes, trim the edges to make squares. Put on a plate, put the filling on the surface, roll up. Cut the rolls into 3 cm thick pieces.

I didn't have enough patience, I didn't put the filling in the refrigerator, and I wrapped the pancakes while they were still warm, so they were a little clumsy. The first pancake, as they say))))) Further it will be even better.)))))

In general, here you can play with the filling as you like. But I am especially grateful to you for the cod liver, I love it very much, but I haven't tried stuffing anything except eggs. And for delicious pancakes, wonderfully fragrant.
