Fish cutlets Special

Ingredients

salmon fillet (salmon) 300 g
fillet of pike perch (sea bass) 300 g
chicken fillet 100 g
eggs 2 pcs
Parmesan 100 g
dry basil 1 tsp
dry marjoram 0.5 h l
chili peppers (fresh) 0.5 pcs
salt, ground black pepper taste
tomato paste 2-3 h l
cream 33% fat 200-250 ml + 1-2 tbsp
olive oil for frying
carrots (medium) 1 PC

Cooking method

  • 1 Prepare minced meat from two types of fish and chicken fillet.
  • 2. Grate the cheese on a fine grater and add half to the minced meat (set the other half aside for now). Separate the whites from the yolks. Remove seeds from chili and chop finely. Add the yolks, prepared chili, tomato paste and all the spices to the minced meat (salt, taking into account the salinity of the parmesan) and mix everything together until smooth.
  • 3. Whisk the whites into a strong foam and stir into the minced meat.
  • 4. From the prepared minced meat with hands soaked in cold water, form cutlets and fry over high heat until golden brown (literally 1-2 minutes on each side). Cut the carrots into slices and place on the bottom of the baking dish, top with the fried cutlets.
  • 5. Mix the cream with the remaining cheese, add a little pepper and pour over the cutlets. Put in an oven preheated to 200C for 10-15 minutes.

Note

Thanks to the whipped proteins, the cutlets are fluffy and airy. And after baking in a creamy cheese sauce, they become the most tender.
