Lean soup with mushrooms and beans

Ingredients

Dry mushrooms 50 -60g
canned white beans 1can
medium potatoes 4 things
medium onion 1 PC
medium carrots 0.5pcs
vegetable oil for frying
water 1.5-1.8L

Cooking method

  • Pour dry mushrooms with water and put in the microwave at full power for 8-9 minutes. Pour the mushroom broth into a cup. While the mushrooms were in the microwave, cut the onion into small cubes, grate the carrots on a coarse grater. Put a saucepan with a thick bottom over medium heat, pour 2 tablespoons of vegetable oil, put onions, fry until transparent, then add carrots, leave to fry. Do not forget to stir occasionally. Rinse the mushrooms under running water, chop finely and add to the vegetables in a saucepan. Do not turn off the fire and continue stirring vegetables with mushrooms occasionally. Finely chop the peeled potatoes and place in a saucepan. Not a small layer of vegetables and mushrooms has already formed there. In the process of frying, stir them a couple of times, if there is clearly not enough oil, you can pour 0.5 cups of mushroom broth and cover with a lid. After 5 minutes, open the jar of beans, drain the liquid, put the beans in a saucepan, add water. I also add the remaining mushroom broth, but not all, and so that the settled sand would not inadvertently get into the soup. For the uninitiated: sand is sometimes found on dried mushrooms, since mushrooms are not washed before drying, but only wiped with a damp cloth.
  • The soup turns out to be very satisfying, tasty, rich and very mushroom. It also cooks very quickly, no more than half an hour, and maybe even faster.

And you can put the beans after soaking in a saucepan with boiling water and let them cook until tender, then add potatoes, as in a regular soup, then fry from mushrooms and onions, if desired, a decoction of mushrooms.
