Ingredients

Wheat starter d / z 100% - 103 gr.
Wheat flour 1 grade - 410 gr.
Whole grain rye flour- 66 gr.
Drinking water- 248 gr.
Chicken egg white- 34 gr.
Butter- 23 gr.
Salt- 7 gr.
Granulated sugar- 20 gr.
Pressed yeast 10 gr.
Caraway- 1 tsp

Cooking method

  • The water was mixed with the rest of yogurt and fermented baked milk, literally a couple of spoons (all together 248 ml.) With sugar and protein. She added sourdough to it, mixed it. Sifted flour, caraway seeds, butter cut into small pieces, salt were poured on top. I activated the yeast in warm water with sand and flour, minus them from the recipe and added when the kneading began.
  • I baked in cotton on the program “diet bread”, I have 5 hours. XL size. Weight 802 gr.

Larissa I want to bake your gray bread in a bread machine, I have whole grain sourdough, but hop rye sourdough is on the way and there is a lot of it, I need to make bread with it. If done with hop flour, then reduce rye flour? And how do you program the oven? 1.5 hours of proofing, kneading and a couple of hours more for proofing? I have a bork 800, it is programmable.
Or try making your own hops recipe. leaven, but in HP?

My oven is not programmable: pardon: I usually bake starter cultures in the oven and every time I watch them grow in volume by 2 times. And in cotton I bake on the main one and on the dietary one. I think it will turn out so well.
