Sedne
Konstantin, Inna, and you warm up the form with a lid?
Marinuly
Sedne, I'm not Konstantin, but I will answer ... Yes, the form must be warmed up along with the lid
Stavr
Sedne, Be sure to warm up with a lid, and at a temperature of 250 °, well, or at that which is required by the recipe.

Dear bakers, tell a beginner. I want to buy aluminum cast molds, determine the size. I looked at L 11, I think to take 2 pieces, if I understood correctly, then such a form for a loaf of 500 grams. I think for a family of 2 such a loaf is just right. I also want to take a round shape, I have not decided here. What is the most convenient mold diameter? L-17A (170x90mm), 2DMz (195x90 mm), maybe some other shape?
Creamy
Igch, here is a post to help you, there are tables of weights, sizes of different shapes.

Forms for baking bread,

today I baked sourdough bread in it, frustrated it in it, baked it at 230C and lowered it at the end to 200C, put it in a hot one, didn't grease the mold with anything, so the bread stuck tightly to it, it didn't work out whole, who has such forms, how do you cope with pulling out bread, how do you smear and sprinkle the forms?
Olga_Ma
Galina, I grease with oil, and sprinkle with corn flour on top

Ol thanks for the answer .... but you frustrate her?
Olga_Ma

and you upset in her?
Gal, yes, I put it in it and put it in a preheated oven
marlanca
Olga_Ma,
Yeah, I also, only did not smear the form with anything, I hoped for ceramics ...
It's a pity the time ...., almost 6 hours in total and "down the drain" ....
And I always smear and sprinkle all other forms ..., apparently not my day today ...
Olga_Ma
Gal, I also had this, but I covered it with a towel on top, the bread got sweaty and pulled out
marlanca
Olga_Ma,
And he didn't become wet and soft afterwards?
Olga_Ma
Galina, became wet, but I put it on the wire rack in a towel and everything is ok

I bought molds from the bakery. He has not worked for a long time, looking at them, it is partly understandable why ... Blackeners, all in soot, very thick! Along the edges of a centimeter 2 bezel. I think to myself - why did I get in touch with them, I wanted to save money (they were 100 rubles each) ... While you clean it up, I'll spend the same amount on funds And I already feel sorry for them, I want to clean it up, put it in order! I think this is often found in bakeries? Maybe you can advise the best way to remove this soot?
Yarik
Anastasia, this is normal, I, too, from the factory, and also had carbon deposits, scraped with a knife.
Svoboda
Thank you! We also clean it off with a knife, my son helps me. So they are also fastened in three, at the junction in general horror!

Yes, without this carbon deposit there is no way to work - for 2 months this vegetable oil appears, then they are removed, calcined at high temperature and put into operation again
Svoboda
We cleared the moss! But still not everything, only 4 out of 10, it’s very difficult. They were first calcined. Carbon deposits began to flake off a little. Then it was boiled for 2 hours with dishwasher tablets, followed by scraping and reboiling. The final stage is a drill with a wire attachment - a cup.

Anastasia, Hello. If you still want to know how you can wash the forms: my mom once every 4-5 months. I collected all such burnt, boiled (for some reason, they quickly smoked on gas, burned from above) dishes into a large tank (20-25 liters, I think) and poured a couple of bottles of silicate, soda ash 2 cups, 72% household soap 1 bar rubbed on a grater. Water poured half the tank. I put it all on gas. stirring until all ingredients are dissolved. Then she lowered the dishes there and boiled over medium heat. The cooking time depended on the degree of soiling: from 15 minutes to 3 hours.
After the set time had elapsed, the gas was turned off, the liquid cooled down, took out the dishes where soot remained, then cleaned with a brush (when I regularly washed the dishes like this, everything went away in 30-40 minutes).
Try to reanimate your forms in this way.

Dear forum users, tell me, does anyone use this form? Can you advise, is it worth buying and which is better, milk fries or glaze? I myself bake bread in the oven for about five years in a glass form, but it has low edges and the loaf turns out to be flat, although the rise is good. Forms for baking bread

With this form * you can bake any bread:

-Simple - the form is easy to use.

-Tasty - bread baked in a clay mold has excellent taste and aroma.

-Useful - food preserves vitamins, minerals, nutrients.

* Durability - Very strong 100% fireclay clay. The products themselves were fired at a temperature of 1000 degrees, which allows the products to maintain their integrity during prolonged use and high temperatures.
The product comes in two versions: 1. Thickening 2. Glaze

The price is indicated for a product with a "milk firing" coating. Glaze + 200 r.

Milk killing is when a product is soaked in milk and then fired again at a low temperature. The form becomes black (or dark brown).

In our experience, a "milky" ceramic mold is easier to prepare for use.

How to prepare a clay mold for use: Wipe the mold with a damp cloth. Option 1. Use baking paper. Option 2. Turn on the oven, anoint the dish thoroughly with vegetable oil, put it in the oven so that the oil is absorbed faster, repeat this 5-6 times. Lubricate the bread pan with vegetable oil before each use. Sprinkle with flour before baking (or whatever). You do not need to smear the glazed form with oil.

I bought myself L11 forms for Borodino bread. They are just wonderful! Inexpensive, even cheaper than in kukmar, the store is solid, sent by mail very quickly. And even with a certificate of conformity. At the same time I wrote out a pastry knife, I don’t have such a knife yet. There is a lot of interesting stuff in the store. The molds are thick-walled, which is good for bread.

I needed it for Borodino bread. But now I am planning to try a lot of things, even rolls and cakes.? I don’t know what L-11B is. Enlighten me, maybe I need it?
francevna
venera19, Anna, the L-11B shape is slightly larger than the L-11. Size 165/105/100 mm
venera19
francevna, Alla, thanks, I'll be in the know now. I was also interested in the "dock-bread" forms there. As they write on the site 130 * 130 * 105. They are even cheaper than L11.But I already have a large park of different forms, maybe later I will be ripe for their purchase.

I got bored of cleaning metal molds, bought a silicone "loaf" and a hearth dish from Tescoma and have been happy for a month now, leavened bread, I put it in a bowl under a plastic wrap in the oven at 30 degrees, then in molds.
Excellent fluffy bread turns out ...

A hearth dish?
Are you referring to a plastic proofing basket with a bowl or something else?
