Vanilla ice cream

Ingredients

milk 500 ml
cream 20-33% 100 ml
powdered milk 25 g
granulated sugar 130 g
yolks 5 pieces
butter 40 g
vanilla sugar 1 tbsp. l.

Cooking method

  • Mix dry milk, milk, half granulated sugar, vanilla sugar and cream and bring to a boil.
  • Beat the yolks with a whisk with the remaining granulated sugar.
  • Without stopping whisking, add half of the hot milk to the yolks.
  • Add the egg mixture to the remaining milk, stirring vigorously.
  • Return the mixture to the heat and simmer, not boiling, until the mixture thickens.
  • Add butter, stir. Cool the finished mixture.
  • Pour the cooled mixture into an ice cream maker. My ice cream was ready after 30 minutes of kneading.
  • Transfer the finished ice cream to a container and store (if possible) in the freezer.
  • Vanilla ice cream

The author's recipe contains 100 g of granulated sugar and 30 g of glucose, since I did not have it - I added granulated sugar.

The ice cream was a success, this time it really was not yellowish, but as you know the color and taste are different categories. Cream took 20%, if you find fault with it, then for savory teeth you can have a little less sugar. I don’t know how to take artistic photos, so take my word for it: Bombovsk ice cream !!!

The ice cream turned out to be soft ice cream - I could not to understand why it spins for 50 minutes and does not thicken, like in your photo, you cannot make balls from this. until the gaze fell on the display of the refrigerator. It turns out that I did not follow the temperature of the freezer, and I froze the container at minus 12, at the required minus 18 and above. Despite my mistakes, the ice cream did not crystallize ... Well, very tasty! I will repeat it more than once!

Now stands in the refrigerator until evening. What to do with this desolation?
