Ingredients

Cottage cheese (better than a pasty consistency) of any fat content 500 g
Milk 200 ml
Gelatin 1 pack. (11 g)
Sugar to taste 50-100 g
Friable cookies 100 g
Jelly for cake 2 pack. 8 g each
Any fruit optional
Extra milk for wetting the biscuits
Vanilla sugar 1 sachet

Cooking method

  • Make a milk soufflé. Dissolve a bag of gelatin in cold milk, leave for 15 minutes, then add sugar, and, without boiling, heat on the stove until the gelatin and sugar are completely dissolved. Cool to room temperature. Beat with a mixer at maximum speed, the mass should increase in volume. Beat the cottage cheese with vanilla sugar separately, then combine with the soufflé with a spoon.
  • Next, put a layer of cookies in a detachable form (you can double or triple layer), dipping each cookie in milk. Then the whipped mass with cottage cheese and soufflé. Fill the cake jelly (from one bag). The jelly freezes instantly. We spread fruits on it. Then fill it with a layer of jelly from the second bag. We leave it in the refrigerator to freeze (I did it overnight, but I think it will be ready in an hour or two).
  • The cake is very light, especially if you take low-fat cottage cheese, it is good to eat on a hot day

Note

If you want sweeter, then sugar can also be added to the cottage cheese. I did not add, but put candied fruits in the curd. You can add fruit to the mass.
The base can be made from a biscuit, but then it will no longer be a "cake without baking".

Elena, cakes with curd soufflé are my favorites. They are the most helpful.

Thank you! I like fruit ones very much. I make roses with a sharp knife and toothpicks. I cut an orange in half and thin slices. Then I begin to twist the rose, adding slices. I fasten with toothpicks and dipped in cake jelly. When hardened, the toothpicks can be removed, the roses will not lose their shape.
