Ingredients

Chatterbox (to activate yeast):
Wheat flour sun (I have 1s) 200g
Dry instant yeast (Saf-Moment) 3d
Hot water (I have serum) (50C) 300g
Dough:
Chatterbox all
Wheat flour sun (I have 1s) 300g
Sour cream 20% 50g
Softened butter 40g
Sugar 40g
Salt 6g

Cooking method

  • For a chatterbox, heat the water to 50C, beat with the whisk of a mixer for 4 minutes. at medium speed, leave for 15-20 minutes. until bubbles appear. I whipped with knives in Thermomix.
  • For the dough, add all the ingredients, except for the oil, to the mash. Knead for 4-5 minutes. at low speed until the ingredients are moistened, leave for 20-30 minutes.
  • Add oil and knead until smooth for 7-8 minutes. on medium speed .. Leave the dough for 10 minutes. The dough is soft, sticky. I had an irresistible urge to add flour. But I didn't, I decided to do everything according to the recipe for the first time.

  • Then put the dough on the table (if necessary, grease your hands with oil), stretch it into a layer, fold it into an envelope, an elastic ball. Transfer the dough to a greased container and leave to ferment at 30C for 45-60 minutes.
  • After some time, knead the dough, stretch it into a layer, fold it in an envelope, return it to the container and leave it for another 45-60 minutes.
  • Then knead the dough, divide into 12-15 equal parts by weight, roll the balls, put on a baking sheet covered with paper at a distance of 2 cm from each other, cover and leave at room temperature for 30 minutes.
  • Sprinkle with water before baking.
  • Bake in an oven preheated to 220C until golden brown for 20-25 minutes. The exact time depends on your oven. Turn off the oven, open the door and hold the buns for another 5-10 minutes. on the falling heat.
  • Cool for at least 30-40 minutes.

1. I have no HP and a combine, only an old Soviet "Mriya" mixer. Can same knead with your hands? That is, how to understand these speeds (medium, low ...)
