Ingredients

premium flour 250g
pressed yeast 12g
salt 2.5g
sugar 75g
olive oil margarine 75g
eggs 1 average
milk 50ml
water 50 - 100ml
vanilla extract 1h l.

Cooking method

  • Mix water with milk and heat up to 30C. Pour 100 ml of this mixture into a tall glass, add a teaspoon of sugar and crush the yeast there. Do not stir! Leave in a warm place for 1 hour. The dough should increase in volume 2 - 3 times.

  • Then knead a soft dough. I kneaded in a bread maker on the "Pelmeni" mode. Knead until the gluten develops well.

  • Then put in a warm place until the dough increases in volume by 3-4 times.
  • The author advises fermenting for 3 hours. At a temperature of 27C, the dough stood for 1.5 hours.

  • From the finished dough, shape into round buns of 50 g each (this recipe makes 12 buns) and let it stand for 1 hour at a temperature of 30C.
  • Then grease the surface of the buns with an egg-milk mixture (I left some eggs from the norm for the dough) and bake at a temperature of 195C for 10-12 minutes.

  • The buns turned out to be incredibly tender, airy, with a bright creamy taste. Morning coffee with sour jam is incredibly tasty! Highly recommend.
