Gravlax or lightly salted salmon

Ingredients

Salmon fillets 1 kg
Sugar 50g / I have 75
Salt 150g / I have 125
Dill 125g
white pepper / I have a mixture taste

Cooking method

  • Swedish recipe.
  • Set aside a couple of dill sprigs, chop the remaining 120g very finely (chop in a blender). Put chopped dill in a bowl, mix with salt, sugar and pepper, mix well. Cut the fish fillet into two pieces, put the dill on each piece.
  • Gravlax or lightly salted salmon
  • Gravlax or lightly salted salmon
  • Top with dill twigs. And don't ask me - Why? I don’t know the answer. I asked this question, they did not answer me)))
  • Gravlax or lightly salted salmon
  • Fold both pieces with a "sandwich", and to fit tightly, fold the thick part to the thin
  • Gravlax or lightly salted salmon
  • Then wrap this "sandwich" tightly in a clean towel, put it in a bowl (I put it in an oblong silicone cake pan) and refrigerate. Withstand for 2-3 days, turning over and pouring the resulting juice daily. I did not water, I just turned it over. I put it in the evening, in the morning the juice was negligible, I turned it over, in the evening I looked, there is a lot of juice, why should it be poured into the juice during a coup?
  • They eat Gravlax with boiled or baked potatoes, or they make sandwiches.

Note

Looking at the amount of salt, to be honest, I experienced horror: a lot. But still, I poured everything into the dill. When I turned it over for the first time, I had a hard block in my hands, the juice tasted like hollow salt with dill. The husband said: do not be upset, what will you do now? Today I cleaned off all the dill, wrapped the fish in paper and put it aside, something I really didn't want to try. over dinner, my husband still suggested trying it. We tried it, very tasty !!! You can say unexpectedly tasty!

Irr, I love so much too !! After sweet - salty, after cucumbers - milk, yes.
celfh, probably the fish gives a little dill. I like the smell, but the fish should smell like fish.

Probably the fish is giving it up with dill. I like the smell, but the fish should smell like fish.
No, there is no strong smell of dill. Everything else is a matter of taste

In the very first photo of a fish without signs of dill, did you rinse it with water?

Well .. and they also say .. that Europe does not recognize dill at all ... beauty!

Tan, the fish takes as much salt as it needs. It's like lard: you won't oversalt it. Maybe the more literate will disagree with me, but my grandmother taught me that from childhood. I must try: I have not done it with dill yet.

it's just a fat fish ... and so .. unknowingly .. you can get a vobla .. how else would it be dried? you need to be careful with salt ..
Olesya425
Clear. Thanks for the information. I really only salted salmon and trout.

Oh, Olesya, probably so, but how our food industry manages to SO oversalt the herring, it's impossible to take it in your mouth in the summer

Unfortunately, this is a big mistake. It is very easy to oversalt lard and fish and any product. I know from my own experience. But to try another fish according to this recipe, eh?
celfh
Try it, then tell us
