Ingredients

warm milk 3/4 cup
sugar 1/2 cup + 2 tsp
pressed yeast 45-50 g
flour 4 glasses
eggs 3 pcs.
vanilla essence 1 tsp
soft butter 125 g
salt 1/2 tsp
For lubrication:
yolk 1 PC.
milk 1 tbsp. l.
For filling:
soft butter 75 g
frozen chocolate (no more than 60% cocoa) 100 g
sugar 1/4 cup
3 forms, each with a volume of 1.5-1.7 liters, preferably rectangular
1 glass = 200 ml

Cooking method

  • 1. Dough. Dissolve 2 tsp. sugar and yeast in warm milk. Sprinkle 1 tbsp on top. l. flour. Leave in a warm place for 30 minutes or until the dough volume doubles.
  • 2. Dough.
  • 1st batch. Knead the batter from the dough and 1 cup flour. Cover with foil and put in a warm place for 30 minutes.
  • 2nd batch. Sift 3 cups of flour into a bowl (at least 5 liters). Add sugar, salt, vanilla essence, eggs and half butter to it. Knead the dough with a mixer. Add the dough of the 1st batch. Knead with a mixer until the dough is collected in a lump. The dough should be smooth, homogeneous, shiny, with bubbles (15 minutes). Cover with a towel and put in a warm place for 1 hour.
  • 3rd batch. Add the remaining butter to the dough. Mix with a mixer for 10 minutes. Cover with a towel and put in a warm place for 4 hours.
  • The volume of the approached dough is 7-8 liters.
  • 3. Beat the yolk lightly with 1 tbsp. spoon of milk.
  • Grate frozen chocolate on a coarse grater or grind with a blender.
  • 4. Assembly. Knead the dough. Divide it into 3 parts. Roll one piece into a rectangular layer 7-9 mm thick. Lubricate half of the layer with 1/3 of the butter, leaving 1.5-2 cm unlubricated at the edges. Sprinkle 1/3 chocolate and 1/3 sugar on top. Brush one half around the edges with yolk. Cover with free half and pinch well. Connect the ends together to make a ring. Twist the ring 2-3 times. Place the loaf in a greased dish. Repeat with the remaining 2 parts of the test.
  • 5. Leave for proofing for 2 hours. Brush with the remaining egg before baking.
  • 6. Bake 35-40 minutes at 180about.
  • 7. Cool the women in the mold. After removing from the molds, you can pour over the hardening glaze.

Time for preparing:

Total cooking time is 10 hours, but worth it!
