Fruit and berry ice cream

Ingredients

red currant and cherry puree 125 g
apple puree 125 g
sugar 200 g
water 530 g
corn starch 20 g

Cooking method

  • 1. Pour 500 g of water into a saucepan and add sugar, bring to a boil. In a separate bowl, mix starch and 30 g of water. Pour the mixture into a boiling solution and cook until thickened. Cool to room temperature and refrigerate.
  • 2. I defrosted the currants and cherries a little, rinsed them, beat them with a blender, rubbed them through a sieve. Put the prepared puree in the refrigerator.
  • 3. Put the applesauce in the refrigerator too (put out the apple in the microwave)
  • 4. When everything has cooled, strain the jelly through a sieve, add the currant and cherry puree, add the applesauce and mix everything with a whisk.
  • 5. Load the ice cream maker and cook until freezing. It took me 50 minutes.
  • Put in bowls or put in the freezer until completely freezing.
  • Bon Appetit.

By the order of the children and her husband, I made this ice cream again. Only changed the proportions. The texture is creamy, plastic, without ice crystals.

* water - 500 ml
* sugar - 170 gr
* starch - 20 gr
* frozen strawberries - 120 gr
* frozen cranberries - 70 gr
* frozen red currants - 100 gr

This time I reduced the water - it did not affect the taste, but it froze in the ice cream faster - 35 minutes, but it was 50. First, I boiled the jelly and left it to cool.
There were no apples and mashed potatoes from them, too, it turned out great without them. She rinsed all the berries with cold water and ground them well with a blender. The mashed potatoes did not grind through a sieve, but put the mixture back into the freezer. When the jelly has cooled to room. tem-ry, took out the berry puree, added jelly, beat it again with a blender and into an ice cream maker.
It turned out very tasty. The main taste is strawberry. So you can play with this recipe to your taste. Bon Appetit.

I made ice cream yesterday at the dacha. Berries took a mix - strawberries, strawberries, raspberries, red and black currants. The weight of the berries turned out to be 350 grams. I didn't weigh the puree. I made jelly, mashed potatoes, mixed everything in the freezer. I interfered only once, because I went to sleep. It turned out delicious, but not that. Mine said popsicle. There are many pieces of ice. Apparently you need to stir or beat more often. An ice cream maker is great!

I really wanted fruit and berry. I decided to experiment and made two types of ice cream. In the fridge there is last year's cherry rubbed with sugar:

* cherries with sugar - 250 gr
* water - 250 gr
* starch - 20 gr
* frozen black currant - 500 gr
* sugar - 200 gr
* proteins - 2 pcs
* apple puree - 120 gr

1. Cooked jelly from water, sugar and starch. Cool and put it in the refrigerator.
2. When the jelly has cooled well, added black currant to it (took it out of the freezer and rinsed it with warm water, it should be slightly defrosted), added applesauce and beat everything with a blender. Then she rubbed everything through a sieve. (I made compote from the cake.)
3. Divided the puree into two parts - 600 and 400 gr. Made in an ice cream maker.
The first 600 grams was frozen for 50 minutes. It turned out to be a good dense ice cream without ice crystals. Temperature at the end of the program -8 degrees. I put it in a container and put it in the freezer.
Secondly, 400 gr added whipped protein. The ice cream was ready in 40 minutes. The mass turned out to be smooth, silky, without ice crystals, dense.
I gave both types of ice cream to the children and my husband for testing. The kids said they tasted the same and liked both. My husband liked the option with protein more, said that this ice cream has a softer taste.
Tasty, natural and healthy !!! But next time, I'll dilute the currants with other berries, because it's still sour.

With dried apricots I did this: soaked dried apricots overnight in cold, boiled water, whipped in a blender in the morning and mixed with applesauce and jelly. Since dried apricots are different in sweetness ratio apple: dried apricots I select to taste, total weight = 250g. And into the ice cream maker.
We used to sell soft apricot ice cream in Odessa, I remember how a thick dark orange mass was poured into an ice cream maker, apparently they were fresh apricots, so in the summer I will try from fresh ones. And with dried apricots is also very tasty and healthy!

I had a stabilizer for soufflé and cream, there is starch and no need to cook jelly.
I put 120 gr of this stabilizer. And put 150 grams of sugar.
