Adjarian khachapuri

Ingredients

Yeast 12 g press.
or 2 tsp dry
Wheat flour 400 g
Salt 1/4 tsp
Vegetable oil (odorless) 2 tbsp. l
Sugar 1 tsp
Imeretian cheese
(you can sulguni, feta cheese, chanakh)
250 g
Cottage cheese 100-150 g
Eggs 1 PC. into the dough,
4 things. in the filling
Butter 40 g
Water 250 ml

Cooking method

  • Knead the dough in KhP using the "main" program, the "dough" mode.
  • Leave the dough for 1 hour. The dough should double in volume.
  • During this time, prepare the filling: grate the cheese, add cottage cheese, 1 egg, mix everything well.
  • Roll out the suitable dough into 4 parts, give each of them an oval shape.
  • Place the filling in the middle, leaving the edges unoccupied. Form 4 boats. Let them rest for 30 minutes.
  • When the khachapuri are almost ready, take them out for 1 minute and quickly drive 1 egg into each. Put it back in the oven until the protein curdles, the yolk should remain liquid (as when cooking fried eggs).
  • In each khachapuri, while it is hot, put a piece of butter.

Khachapuri turns out to be large, designed for respectable eaters, but traditionally they are made like that. They eat them with their hands, tearing off pieces from the side and dipping them into the middle of the khachapuri.
Translated from Georgian, it is bread with cheese, so you can make them from the simplest yeast dough and use any pickled cheese.

And for some reason I like to put in khachapuri not cheese, but suluguni, grated and also mixed with cottage cheese and garlic. I even sprinkle the pizza on top with grated suluguni - it stretches melted great! But such an elegant look with fried eggs on top, I will definitely take note!

You can take any yeast dough you like. Now I am making yeast dough without eggs, there is no baking besides vegetable oil or margarine. And the yeast would be reduced to 10-8 g of pressed. I put the egg in the filling, if the cheese is not fat, dry, you can also add a little melted butter. But an egg in each boat is already a trademark, this is a must.
