Zucchini with an unusual sauce.

Ingredients

zucchini 1kg-1.5kg
tomato 5 pieces
green onions 1 bunch
sorrel 1 bunch
garlic 3 cloves
sugar 1 tbsp. l
salt, ground black pepper taste
olive oil, sunflower oil for frying

Cooking method

  • Cut the zucchini into rings (I cut it without a Berner knife insert), season with salt, sprinkle with black pepper and roll in flour. Fry on both sides in vegetable oil until crusty. Place in a saucepan or tray.

  • Cooking the sauce. I cook the sauce in MV Dex-60. Peel the sorrel and green onions, sort, wash and chop. Cut the tomatoes on top of the head in a criss-cross pattern and pour boiling water over for a couple of seconds. Drain the boiling water, put the tomatoes under cold water and immediately peel them. Cut into cubes.
  • Lightly fry green onions, sorrel in olive oil and add chopped tomatoes and sugar. Stew for 10 minutes, add chopped garlic and zucchini. Bring to a boil and turn off. Hold under a closed lid for 15 minutes.

Note

When I cooked this dish for the first time, it impressed us with its unusual taste. Thanks to the unusual sauce, zucchini acquire a bright taste and go well with any side dish, or they themselves are a side dish for meat or fish. They go well with young potatoes.

Tatyana, ! The taste of zucchini should be slightly sour, but sugar and salt can be adjusted to your liking. We have it more in the direction of sweet and sour. I salt the zucchini just before frying, then drain the excess water, add pepper and fry. I don't add any more salt. But maybe someone will find it unsalted, then the sauce can be a bit and salted.
