Ingredients

Flour 3 glasses
Kefir 2 tbsp.
Salt pinch
Sugar 2 tbsp. l.
Soda 1 tsp
baking powder 1 tsp
Pine nuts 3 tbsp. l.
Poppy 2 tbsp. l.
Sesame 2 tbsp. l.

Cooking method

  • In a bowl, mix flour, soda, baking powder, salt, sugar, nuts, sesame seeds and poppy seeds. Mix well. Then pour everything with kefir and mix very quickly. !!! DO NOT INTERFERENCE FOR LONG !!! Since soda and baking powder will very quickly come into contact with kefir and the process of loosening the dough will go (which gives the bread porosity). And if we stir for a long time, then the bread will turn out to be very dense (though still tasty) So, we quickly mixed and put it in a greased mold (in my case, a cake pan). Small grooves can be made on top with a toothpick, so that later it is convenient to cut bread. We bake at 180 degrees for about 1 hour (you can check for readiness with a toothpick) It turns out very tasty nyam bread, and most importantly "fast".

the point is that soda bread (or quick bread) is a very different kind of bread.
Unlike yeast or sourdough, soda should be mixed as little as possible. But let's start in order.

Several rules for successful cooking soda bread:

- dry ingredients (flour, sugar, salt, soda, ...) mix separately, and liquid (kefir, egg, ...) separately. (We do this so that soda and kefir do not react ahead of time)
- since the bread contains kefir and soda (this is an excellent baking powder for dough, but unfortunately, with a very quickly fading effect) In order not to lose the loosening effect for as long as possible, you need to mix the liquid components with the dry ones quickly enough and immediately before baking. Important in this bread do not knead, as in yeast, namely to mix the components at a fast pace and in a short time.
I wouldn't trust a bread maker to make a batch of soda bread. The bread will be very dense. (Although, ... who likes what)
- quickly mixed and immediately into a mold and into the oven or into a bread maker in the "baking" mode
- it is better not to add oil to the dough. It can be put on ready-made, hot baked bread (it is advisable to do this when the bread is still in a mold) This way the butter will penetrate into the inside of the bread faster

And if instead of baking powder you put another 1 tsp. soda? Or do you really need a powder? I don't really like extra chemistry, and baking powder is the same soda? Or not? Who would suggest?

You can freely replace one with another in the same proportions. I love baking powder more, because it does not have a specific soda smell.

I baked in a slow cooker, made half portions, decided to just try to bake bread in MV.the bread rose, baked, but the color is the same as that of Darnitsky, although it was baked from ordinary wheat flour and in the photo everyone has light bread inside, and I have it as if from rye flour. It is still cooling down, but I suddenly began to doubt - maybe some kind of reaction happened, that the bread darkened, although what could be so special there: flour, sugar, salt, soda, kefir. Can you eat it?

I baked this bread! Very tasty! Looks like a savory cupcake! True, I made 50/50 whole grain and premium flour + there was no kefir and I diluted 3 tablespoons of natural yogurt with whey. Baked in a bread maker for 1 hour 10 minutes.

The bread is unusual. Very tasty near the crust, but mild in the middle. And a lot of it for a family of 2. I think that it should be baked with a baguette. Then it will bake well and there will be a lot of crusts.
