Ingredients

Wheat flour about
1.5-2 tbsp.
Milk
(fresh or sour, it doesn't matter)

Sugar 0.25 kg

Spice
(ginger, cinnamon,
red and black pepper)
and salt
1/4 tsp each

Cooking method

  • Knead, cut out 1 cm thick circles and bake. Boil the frosting from 1 cup sugar and 1/4 cup water (milk) for 12 minutes (required). Dip the gingerbread cookies in the glaze and put them in one row on cellophane to dry. This should be done quickly, since the glaze hardens. Delicious! Try it, you won't regret it. And it seems to me that you can knead the dough in a bread maker, it is not particularly hard.

Basic recipe for gingerbread dough:

for 50 pieces
125 gr. sl. oils
100 grams of sugar
3 eggs
250 gr of liquid honey
2 tsp gingerbread spice mixture
100 g of candied lemon zest
100 g of candied orange peel
160 gr ground almonds
500 gr flour
1 bag of baking powder

beat the butter and sugar until frothy, add 2 eggs, mix honey, spices, finely chopped candied fruits and almonds to the mass.
mix flour with baking powder and combine with creamy mass, knead the dough, wrap in plastic and put in the refrigerator for 30 minutes.
heat the oven to 180 degrees
Roll out the dough about 5 mm thick, cut out the figures, grease with the remaining egg, garnish with halved almond kernels and candied fruits as desired, put on baking paper, bake for about 15 minutes.
cool on a wire rack. (very tasty gingerbread, the longer they lie, the tastier they become, good with milk)

Gingerbread "Bears"

for 40 pcs

250 grams of honey and sugar
150 gr butter
1 tablespoon cocoa powder
2 tsp gingerbread spice mixture
1 egg
500 gr flour
1 tsp baking soda
2 tbsp rum

while stirring, heat honey, sugar and slab in a saucepan. butter until sugar is completely dissolved, let cool
add cocoa, spices, egg, flour
dissolve soda in rum, add to the mixture and knead the dough
leave overnight
roll out the dough 5 mm thick, cut out the "teddy bears", bake at 180 degrees for 15 minutes, cool on a wire rack, decorate with glaze. (different from the previous ones, more delicate and crunchy, fragrant)

Curly gingerbread

for 30 pcs

250 grams of honey and brown sugar
150 gr plums. oils
100 grams of ground almonds
3 tsp gingerbread spice mixtures
400 gr flour
1 tablespoon of baking powder, lemon zest and cocoa powder
1 egg

while stirring, heat honey, sugar and slab in a saucepan. butter until sugar is completely dissolved, let cool

dilute baking powder in 2 tablespoons of water
knead the dough and refrigerate for 4 hours, covered with foil

Please, here's a recipe for an old Polish holiday gingerbread. I do it every year for Christmas, not fast, but worth it.

1 kg of wheat or rye flour (I take rye),
500 gr of honey
350 grams of sugar
250 gr lard or butter,
3 eggs,
3 tsp soda,
2 teaspoons of ground spices (cinnamon + cloves + ginger + cardamom), a handful of chopped kernels,
3 tbsp. grind. orange. candied fruits,
1/2 tsp salt
1/3 cup milk

Warm honey, sugar and lard, gradually bringing sugar and lard to dissolve, remove from heat, cool to a warm state (when the hand suffers) and add eggs, soda diluted in cold milk, salt, spices, candied fruits and flour to the warm mass with continuous stirring ... I want to add a recipe I have tried more than once Czech Christmas gingerbread.

The gingerbread baking starts a month before Christmas. It is believed that the longer the honey cake lasts, the softer it will become. Dissolve 150 g of honey along with 50 g of lard (I put butter) and 250 g of granulated sugar, stirring constantly. Cool slightly, stir in 2 eggs, one yolk and 5 tbsp. l. milk. Gradually stir in 500 g of wheat flour and 1 tsp. baking soda with spices. There should be a lot of spices (no less than a tablespoon), their choice to taste. Traditional: cloves, cinnamon, anise, cardamom, allspice, star anise. Knead the dough until smooth. Put it in a plastic bag and put it in the refrigerator for several days (let it lie for at least a week, at least a day). Roll out to a thickness of about 0.5-0.6 mm, cover the gingerbread with recesses, bake on a baking sheet covered with baking paper in a preheated oven. Decorate with icing of whipped protein, powdered sugar and lemon juice. Or in another way. If you plan to decorate the Christmas tree with gingerbread cookies, it is better to make holes for ribbons in freshly baked gingerbread cookies while they are still warm. They are stored without wrapping, keeping in sight, this is the same decoration! It's a paradox, but they really soften during storage.
