Pumpkin sweet bread in a bread maker

Ingredients

Pumpkin puree 150 g
+ serum up to = 275 ml
Fresh yeast 15 g
Sugar 4 table. spoons
Vanilla sugar 1 sachet
Instant Oatmeal 2 table. spoons
Butter (margarine) 50 g
Flour 450 g
Salt 1 tea the spoon

Cooking method

  • Boil the pumpkin in steam or in water, drain the water, puree the pumpkin with a blender. Put 150 g of puree in a measuring glass and add, stirring, with whey to the level of 275 ml. Pour the mixture into a mug, add salt, sugar, yeast there, heat to a "steam" temperature and pour into a bucket of a bread machine. If your HP evens out the temperature before mixing, you don't need to heat anything. Sift flour on top, add flakes, pour in melted margarine.
  • White bread mode, light crust.

Cooking program:

White bread - 3 hours 50 minutes

Note

The bread is soft, sweet, very fragrant, finely porous. There is absolutely no pumpkin taste. If you add raisins, you get a real Easter cake !!!

True, instead of whey, I added milk, and I did not add flakes, because. they were not. Next time I'll put in more sugar because I like sweeter baked goods. My only change is the amount of sugar, I took 2 more spoons of it. The result is a fragrant sweet loaf of amazing yellow color. Neither pumpkin nor oatmeal flakes are felt, absolutely.

Whey can be replaced with kefir, milk, water, and ... pumpkin broth. The taste will be slightly different, but the result is always great!

And the second time I added 1 egg, 2 more tablespoons of sugar, raisins and, accordingly, flour to the recipe - and I got a great cake!

In my opinion, the most delicious of those that I baked in a bread maker! It turned out to be airy and so tall (even too under the lid!). Baked on a special setting (for sweet pastries with egg and butter).

And the taste of pumpkin really is not felt!

The bread turned out to be high, but the roof fell off or sagged. I didn't open the lid of my bread machine during the baking process, only during kneading. The gingerbread man turned out to be plump and not sticky to the touch. Why has the "roof" of the bread fallen off or has settled? After all, instead of leaven, as I read, kefir is added ... But I will not stop there, I really liked it. Thank you!

Maybe all the same 2 tsp. dry yeast is too much, so the bread rose strongly, and then fell off. I would try 1.5 tsp.

Well here's another try! Instead of sourdough, I took 3 tbsp. l. (measured) sour cream, diluted with warm water to a volume of 125ml, added 150ml pumpkin pureed in a blender, 1.5 tsp. yeast (dry). Here's the result!
The roof has not fallen off, has not settled, the crumb is well baked, but a little loose, but the taste is incomparable !!!

If your HP pre-equalizes the temperature before kneading, then you do not need to heat anything in a mug. Load the ingredients in the order shown for your HP and you should be good to go.

Thank you so much for such a wonderful recipe! I bake this cupcake (as my husband called it) for the fourth day in a row, it is eaten very quickly. Nobody even knows about such an ingredient as pumpkin (there is no pumpkin taste), the bread is soft, very tender, it just melts in the mouth, and what a sunny yellow color this miracle has, and with raisins, it's just a real Easter cake !!! True, I had to deviate a little from the recipe: I replaced the whey with 1 egg + sweet syrup from my candied losers + 2 tablespoons of powdered milk.

I made some bread yesterday. Has risen very much, 840 gr. weight. It tastes like Easter cake. Added 5 tbsp. spoons of sugar - I would have more. I did it on water - next time I will add milk for sweetness. It was difficult to determine the consistency of the pumpkin puree. I added oatmeal, I don't feel it, but I think it's necessary to add it for friability. I think I need raisins and more, it tastes better with it.
