Ingredients

Eggplant 2 medium copies

Cooking method

  • Pass the pork through a meat grinder, grind the onion, garlic with it, add your favorite spices, soy sauce to taste, for the juiciness of the minced meat, I also add a little milk, and be sure to add greens. Today I had green arrows of garlic, I passed them along with the minced meat through a meat grinder. Beat the minced meat well with your hands.
  • Cooking batter. I always have Korean batter "Ottogi" in stock, which is a pleasure to cook with, because it is simply diluted with water and whipped until smooth. If there is no ready-made batter, then it is better to make a real Chinese batter .. In the original, beat 2-3 eggs, add 1 tbsp. l. starch, 1 tsp. \ "ajinamoto \", 1 cup water and add flour until it is like pancake dough. The batter should be thick and viscous.
  • Beat one egg separately in a bowl.
  • We drain the water from the eggplants, dry them. It is very convenient to do this in a vegetable dryer.
  • While we are preparing semi-finished products for frying, we heat the pan.
  • So, put together a sandwich :) Spread the minced meat on a slice of eggplant with a layer of 0.5 cm and put the second slice of eggplant on it. The resulting stuffed eggplant is dipped in a beaten egg, then well immersed in batter and dipped in boiling oil. The dish is being prepared over medium heat.
  • It should be noted here that in the original, the Chinese cook these eggplants, of course, in hot oil. But since we are for a healthy lifestyle, and a lot of useful devices came to our aid that can be cooked completely without oil, this time I took a chance to cook eggplants in the Orion pancake maker, just smearing the surface in front of each with a brush with oil bookmark. It seems to me that a contact grill will cope with this no worse, and maybe even better. The only wisdom is this: at first, do not try to close the pancake maker with the latch until it stops, but let our art steamed properly - grab the batter and only then push the device and close it completely, thereby compressing it. When the batter becomes yellow-golden in color, you can take it out, the dish is ready.
  • While the eggplants are fried, prepare the sauce. Add crushed walnuts, salt or soy sauce, spices to taste, herbs to the sour cream and move until smooth.
  • We eat eggplants, dipping in sauce. Bon Appetit!
