"Snails" with goat cheese from Donato De Santis

Snails with goat cheese by Donato De Santis

Ingredients

Paste:
Wheat flour 300 g
Pea flour (for color) 75 g
Egg 3 pcs
Salt pinch
Water 1-3 st. l.
Filling:
Goat cheese 300 g
Pitted olives 2 pcs
Fresh parsley (leaves) handful
Fresh basil (leaves) handful
Coarse salt pinch
Parmesan (grated) 1-2 tbsp. l.
Egg 1/2
Sauce
Cherry tomatoes 6-8 pcs
Cream 150-200 ml
Salt pepper taste
Olive oil for frying
Black truffle (can be dispensed with or replaced with forest mushroom) 1 PC
You will also need:
Parmesan taste
Cream 100 ml
Olive oil with truffle 5-6 drops

Cooking method

  • Prepare pasta. After kneading, the dough must "rest", lay under a towel and a glass cover
  • Put in a mortar a few parsley leaves, a little basil, a couple of olives, salt a little and grind thoroughly.
  • Add the resulting mass to goat cheese, mix, add Parmesan and 1/2 (beat the egg in a separate cup and measure about half), knead the mass and put it in a cooking bag or syringe.

  • Roll out the dough thinly (I did it with a typewriter, align the edges, cut 2 ribbons (3-4 cm wide, length as you like, I have about 40 cm), squeeze out the filling along the entire length, carefully fasten the top, roll up in the form of a snail and carefully pinch the layers in several places, leave to dry.

  • Cooking the sauce:
  • Pour in a little olive oil, add the cherry tomatoes cut in half, grind a little, salt and pepper.
  • Cut the truffle (you can do without it or replace it with a forest mushroom).
  • Add cream to the tomatoes, steam for a few minutes, turn off the heat. Lay out the truffle (I have it without it).

  • Gently place the pasta in boiling, salted water (about 10 grams per liter of water). Cook. After the "snails" surfaced, I cooked for 2-3 minutes.
  • Put the pasta in a dish with sauce, moisten with cream on top, sprinkle with Parmesan. Place in the oven for 15 minutes. at 180 gr.

  • Put on a dish, add a few drops of olive oil with truffle.

They look really festive. It seems to me that very different fillings are appropriate here, and you can experiment with color. Of course, you can do it in stages.And most importantly, it's not difficult.
By the way, I also made "snails" in the evening, and boiled the sauce in the morning.
